I found myself again at the Whole Foods scowling at the freezer section and the ever shrinking number of vegan options. I eat mostly fresh food, but sometimes I'm at work or need a mid-afternoon Saturday meal and I want something I can throw in the microwave and eat, worry free. I come across a couple green boxes I've never seen before. Picture of the food on the front looked super tasty, and I reached for one awaiting the disappointment of "milk" or "cheese" that they cram in everything. A smile creeps across my face when I read "100% plant-based" on the front. Most folks know that cheese isn't a plant, right? Sure enough, vegan! So I bought one of each available option.

For lunch today, I had the first one (the pasta). I'm am seriously not disappointed. I'm a bit of a basil freak, so I'd add more to it the next time for an extra kick, but this was very tasty. The veggies were in big chunks, and the sauce was good enough that I even ate the carrots (I don't do carrots). The downside? I am *full*...too full. It says one serving, but it's a lot of food. At least for me to eat at once. So for around 4 bucks and 5 minutes prep, I got one full and satisfied me.
