Paul found this brand of tofu while shopping at Woodman's (a local employee owned grocery store) http://www.pulmuonewildwood.com/product.asp The version he's been picking up is a super-dense tofu that has almost no liquid whatsoever.

Today I'm trying something different. I took some ketchup, maple syrup, A-1 Steak Sauce and Tamari and put them together in a bag. I dry-fried the tofu based on http://hubpages.com/hub/How_to_Cook_Tofu_Like_the_Pros and then put the tofu into the plastic bag and let them sit for a while.

I'm going to bake it and then put it on some cheesy bread. Hopefully it will work out.

2. My favorite tofu marinade

combines apple cider vinegar, mango juice, lemon juice, salt, Pica Limon (a citric-acid/salt sort of thing they sell in plastic shakers in the Mexican candy section of little stores), a bit of sugar, some garlic, olive oil, and a few drops of liquid smoke.
