Yummy tomato soup cake

I have some vegans at the table so wanted to offer another desert along with the traditional pumpkin pie.

We are subbing out cranberries and pistachios for the raisins and walnuts cuz that's what we have around.

Interesting that the original vintage recipe calls for no eggs or milk - probably due to availability (depression & war time.)

Making in a bundt pan with a "buttercream" frosting made from Earth's Balance stick margarine, vanilla, coconut coffee creamer, and powdered sugar.

I may try it sometime, but I woud leave out the walnuts and raisins because I don't like either of them. I would use the cranberries and pistachios.
