We have the wrong dentition, more suited to tearing through the outer skin of fruit and grinding leaves and grains than tearing through the tough hide of an animal and shredding the raw flesh underneath.
We have the wrong digestive system, true meat eaters have a very short gut that eliminates raw meat contaminated with environmental bacteria before it can make them sick; ours is very long, much more suited to vegetable foodstuffs. If we don't cook our meat first, we tend to get sick from it; if we don't cook our meat first, we can't chew it unless it's been preground.
Raw meat doesn't even look or smell appetizing to most of us, even when we pride ourselves on being carnivores. It doesn't begin to look particularly edible until we've changed its nature by cooking it, preferably well seasoned and with a nice sauce.
That our forebears altered meat so they could manage to eat it without killing themselves in environments poor in vegetable food is just proof of their genius. That we are not naturally geared towards eating meat in its natural, uncooked, fresh killed and hide covered state is indisputable.
