What is the item that is indispensable if you're a vegetarian

We just switched my kids to a new pediatrician who is a vegan after meeting with her for a while last week. Anyway, while we were talking she recommended vrg.org (which I promptly joined) and some kinda kitchen device whose name I can't remember.

Any thoughts. Even if you don't get the "right" answer, it'd be interesting to hear what everyone thinks is the most important kitchen implement for a vegetarian. (should not include the rolling pin you use to beat your husband when he's cooking burgers on the deck).

1. For me, it's my mini-chopper.

I use it almost every day, chopping veggies for stir fry or rice or whatever. I love that little gizmo! :)

2. I use my wok and steamer more than anything else

but the one thing I couldn't live without as a veggie isn't a cooking utensil, it's Vegenaise... mmmmmmmmmmm....

5. My food processor

I make pesto, tofu mayonnaise, salad dressings, chop veggies, and puree soups and sauces in there. :-)

Oh, and the grater/slicer attachment comes in handy, too.

7. silicone baking dishes

Since it's harder to get baked goods to bind w/o eggs and stuff is more likely to stick w/o all that animal fat to float on the silicone baking dishes are a lifesaver.

I love making baked goods.

Was it the vitamix? Everyone I know who has one says it's indispensible.

14. I love my Vitamix, but I love my pressure cookers more!

Oh wait, could I be wrong? . . . I recall delectable tofu dip recipes where the tofu is perfect creme, no itty, itty, bitty chunks of tofu, but perfect creme. Oh, & same with almonds & cashews & everything you drop into this blender! Yep, I love my Vitamix!

They have refurbished ones for about $350. I paid $500 new. ~GASP!

17. I was gonna say my rice cooker but

my food processor broke last week...and life has been hell without it. Making hummus without it is a real chore and my tofu and soups have been quite...humbling.

Though I don;t use it as much as I should. I got it last year. I should really try out some of the recipes I got in the cookbook I bought with it. :)
