So what was dinner tonight veggies?
I'm doing my meal planning for the week and have no clue what to make for dinner Sunday night. Woud you mind inspiring me once again? We have at least two recipies borowed from the veg forum on the week's menu, there's always room for another. :)

1. I had a really good stir-fry
I stir-fried a blend of organic veggies (made it very spicy), and then made some grains (brown rice, wild rice and millet) and lentils mixed with Roads End Organics vegan gravy.

It's my favorite dish to make to bring to parties/potlucks, etc - always popular! Thank the veggie gods for vegenaise. :)

3. Last night I had fajitas.
Lots of veggies (green and red peppers, red onion, mushrooms, brocolli), stir fried with Boca crumbles, spiced up, on fajita wraps made at the local health food market. Sour Supreme sour "cream" and tomato topped it off.

5. Last night we had Orange-Cumin rice stuffed peppers
(recipe from the Vegan Planet :-)), with refried beans and a salad made of avocadoes, tomatoes, onions, lemon juice, and cilantro.

It's the first time I made the recipe from VP - the peppers I used were really hot (pasilla). Too hot for me. It even permeated the rice mixture. But my husband had no problems eating it :-).

6. Veggie Chop Suey from the place down the block.
Oh, it was goooood. I love that restaurant. It's been there for like 40 years, with another generation taking over every once in a while, and they make the best veggie stuff. :) And the best part is that I have left overs!

mmmmmmmmmmm - Gardenburger variety, of course. My boys LOVE it. It's our "special meal" food. I have to work soooo hard to make it. :rofl:

Usually with parsley/parmesan egg noodles (yolkless mixed with the whole wheat kind - we're still transitioning. yeah after two years.) Though mashed potatoes would be good, too.

Also usually with fresh steamed broccoli, but I was out so we had green beans instead. (modified southern style - cooked with veggie boullion and garlic bits.)

10. Pasta with pesto sauce, sundried tomatoes and "chicken" strips
Someone brought up pesto in the cooking and baking forum and now I have to have some.

Trader Joe's has ready made pesto, sundried tomatoes already sliced, $.69/lb pasta and fake chicken strips. That's all I need.

I think there is parmesaen in the pesto so it isn't vegan though.
