French fried sweet potatoes?
On the news they showed a restaurant that had eliminated transfats (yay!). The owner had a platter of French fried sweet potatoes. They looked as if he'd made sweet potatoes into French fries the same way you do with white potatoes. They looked yummy.

Has anyone ever done this? How is it done?

1. Haven't done it but have eaten them. They really are yummy.
BTW, does anyone use lard ? I use it for pie crusts and in Mexican cooking. I read years ago that it is much less harmful to the body than some of the oils. I think it is great, but of course My Mother used it. We rendered our own fat. Always slaughtered a pig in the Fall.For a few years, during youth, I avoided it as I thought it was harmful.

How are you going to fry the sweet potatoes?

My grandmother used lard in all her pies, and they were excellent. I always have some around and use it in pastries that are going to have a savory filling. I've been using butter flavored Crisco in sweet pastries, but now that I know what to look for on the label, I think I'll probably be switching to lard or all butter.

For refrying beans, I use bacon fat. Second choice is lard.

3. I oven fry potatoes
Just cut the sweet potatoes into the thickness you like and toss them with some oil. I use canola oil, but olive oil works too. Season them with salt, pepper, and chili powder. Spread them onto a cookie sheet and bake in a 425 F. oven.

Check after 15 min and turn them over and bake some more.

I cook white potatoes this way too.

But there's a barbeque joint in Kansas City that offers sides of french fried sweet potatoes, and they're terrific with a slab of ribs.

It looks like they prepare them exactly as you would with a regular potato, but they use much less salt after frying. I'm guessing as well that they fry at a lower oil temperature to cook them through without overcrisping them.

I'm still laughing about how the Angels game ended on Thursday.

If the A's win the division this year, sweet potato french fries for everybody!

7. I've done sweet potato chips
Slice 'em thin, fry them in 300-325 peanut oil until they look cooked (I don't know a better way to describe it -- they change color and get soft but aren't brown or crispy), fish out of the oil and drain on paper towels, jack up the oil to 325-350, fry once more until they're slightly browned. Drain again, salt lightly.

9. Those are so good!
I also slice and bake them instead of frying. Even baking them whole first and then slicing in long quarters and browning in a dry frypan is very yummy - and easy. We had them tonight with salmon and cole slaw. I'm wild for sweet potatoes.

Place in single layer on baking sheet - toss with olive oil, cumin, salt, pepper, chili powder and bake at 400 degrees until done - delicious!!!

12. If you have a Trader Joe's near you
You can buy them frozen in a bag like regular ff's. I put them in the oven myself but they're also good deep fried.

Well, 1/10th of their manicures.

I like sweet potatoes raw best. Sliced thin into salads.

19. DH & I used to do tempura all the time.
That's practically the only way I've eaten sweet potatoes.

For tempura, make sure you use ice cold water or beer. If you're using ice water, drop a few cubes of ice in it to get to the amount of liquid you need. Putting it in the freezer is good too. Barely stir the batter. Lumps are good. In fact, I had best results if I stirred with chopsticks. It was impossible for me to over stir w/chopsticks. Make sure the vegetables & shrimp are completely dry. Keep the batter in the refrigerator between frying. Get the oil to 350, add a few pieces at one time & fry just until they're done. They won't get much color, unless you're using beer in the batter. Make sure all the vegetables are the same size. I would fry each veggie separately & then the shrimp. Also, I had the best luck when I used absolutely fresh peanut oil.

You know, I think I'll do tempura soon. :)

17. I first had sweet potato fries in Massachusetts.
Yum, yum. I think they are often found as "state fair" food.

I use sweet potatoes to make home fries. Just cube them up, brown in butter, and cover for a few minutes to finish cooking. Jazz them up any way you like. I serve these with barbeque, or with seafood or fried chicken.
