Question about peanut oil

How well does it keep? I can only buy it in gallon jugs. My main use for it is to cook potatoes. I've googled and googled but nothing about long term storage. I have room for abut two quarts in the fridge but the rest will have to be stored someplace cool and dark. How long can I expect it to last?

1. Probably until it smells bad

I keep a small bottle (just found a bottle and poured it in) for use when I cook rangetop (like chicken or whatever) but when I deepfry, which isn't that often, that's when I use it in quantity (that's why they're sold in gallon bottles). Always seems to be fine when I use it.

I just store it under one of my cabinets. If you live in a perpetually hot climate, that may not be an option, but where I am (the northeast) it's fine. I doubt I'd waste precious fridge space on the stuff, though.

2. i bet you could freeze it

most water bottles can freeze water without breaking. Just thinking that oils go bad in heat.

Oils keep pretty well until they are exposed to air.....that's when the oxidation starts and they begin to go rancid.

So break up that gallon into smaller amounts and freeze the stuff you are not going to use right away.
