My father taught me this Texas recipe for Beans & Bacon, and it's so good, you'll have trouble cutting yourself off or sharing with others:
15-bean soup mix 1 quart fresh tomatoes 1 large yellow onion 1/4 cup minced garlic 1 lb. smoked bacon 2 tbps butter baking soda 1/2 teaspoon chili powder 1/4 teaspoon cumin
Soak 2/3 of beans overnight with 1/2 teaspoon baking soda (to prevent gas) Rinse beans and place in crockpot with: sliced tomatoes sliced onion sliced bacon (for low-fat version, cook bacon halfway and drain off fat) garlic 1/4 teaspoon baking soda
Cook in crockpot on high for 5 hours, adding chili powder and cumin to taste after 3 hours Just before eating, add butter
Try to limit yourself to 3 bowls, if you can. It's not easy.
Alternately, you can add two pinches of brown sugar and some cinnamon.
Finally, eat as much as you can, because unless you're a vegetarian, you won't want to share any of it.
Once it's cooked, never let it get cold. It has to be kept hot or thrown away. Leftovers are never as good.
