Well, I made my favorite death by crock pot meal tonight
I've been sneaking tastes for the last hour and it is good.

Chicken Con Queso


Boneless Chicken Breasts (I grill them on the Foreman for some color on them then chunk them---still on the raw side inside) (I did four big ones today)

About two cups of Pace Picante Sauce (It's SO's favorite because he hates cilantro---you can use whatever salsa you like)


After cooking chicken in the Salsa for 4 or 5 hours on high add a bag of Shredded Cheese (I used the Mexican blend today Cheddar/Jack)

Stir and turn to low to melt and mingle the flavors. You can adjust the thickness by adding more salsa.



I serve this over rice though it's great on tortillas or chips or as a foundation for Chicken enchilada casserole.

2. Ooh, I'm 'borrowing' that one! Easy and...it sounds so good!
So, what extra has to be done for an enchilada casserole? Mr. PITA doesn't eat rice x(; is that an ingredient?

3. Enchilada Casserole
I layer the cheesy gooey chicken with refrieds, tortillas and low fat sour cream (gotta stay healthy you know!)... I sometimes add extra jalapenos and cheese. (If you add more cheese go to the non fat sour cream :) ) Pop it in the oven for 30 minutes or so. And don't forget to add a layer of cheese on top to get all melty.


This is the probably one of the easiest crockpot dinner in the world and I have to tell you it is really, really good.

Add a couple of cans of chicken broth and maybe some corn, chopped pepper and celery for a great creamy, cheesy enchilada soup.

11. We went grocery shopping tonight
I got the ingredients and am making it tomorrow. I even found a Mexican, shredded four-cheese combo in the bag. I want to make your enchilada version and can hardly wait! I don't know if I should also used some enchilada sauce on the top of the casserole but got some just in case.

12. Casserole is out of the oven and was delicious
I cut the corn tortillas in half to fit them in layers in the pan. All in all, I used one of the large bottles of Pace - the one with the handle. At the end I didn't have enough to top off the pan so I mixed in some mild enchilada sauce to stretch the Pace. And I used Sargento shredded 4-cheeses Mexican cheese in the bag - good stuff.

I have a huge pan of all this and will freeze it in double portions. We're going to have enchilada casserole a la the empress every week for 3 weeks. Using fat free refried beans and the low fat sour cream is keeping the calories down. Next time I'm going to try the non fat sour cream to do even better. There's so much flavor in this dish, we'll never know the difference.

13. Help! I have the semi-cooked chicken in the crock pot w/the
Pace and some cheese. Will be building the casserole for dinner, but am going to use tortilla chips as that's all I have. When layering, where should I put them, on top of the beans before I add that low-cal;-) cheesy/chickeny mixture? Thanks for any tips!

14. Oooooh it sounds good with chips
I'd probably put them under the beans....but I don't think it matters a whole heck of a lot as long as you layer with the same pattern.

Let me know how it comes out!

15. I don't see how I'd spread the beans on top of the chips, so think
