What's your favorite fowl? For me, it's very clearly duck.
Though I do really like pheasant, there just ain't nothing like duck. Whether done in any of the chinese styles, or french style, or vietnamese, pan fried breasts, or just roasted in the oven over mirepoix, no fowl beats duck.

Goddamn, it's yummy.


The only other that comes close, for me, is wild turkey.

I always found duck greasy

now fresh turkey is another story

but my favorite is probably cornish game hens

And I don't find duck greasy. But it could be that I've just gotten used to it, and so don't really think about it any more.

3. You needed to score that breast
and render all that fat out in the first hour of baking.

After the fat is rendered out, the meat is lovely and the skin exquisitely crisp.

However, I still prefer the milder flavored chicken and turkey because of their versatility. I've substituted ground turkey for pork in a lot of Chinese recipes with great success, and we all know chicken takes on whatever flavor you're cooking it with.

However, these days I'm killing the fatted tofu, so I'm just going by memory.
