Sunday dinner?

I have had a busy weekend, so I am keeping it simple. I pounded a couple of chicken breasts flat. I will saute them with olive oil and garlic. Roasted rosemary potatoes. Savoy cabbage and english peas with butter and parsley. Baked custard for dessert.

Anyone else cooking today?

1. I'm actually doing the corned beef I bought for Friday's dinner

Things got away from me there so I never did wind up making my Corned Beef Round. It's now snugg in the simmering crock pot waiting for the cabbage and potatoes.

2. I'm trying one of Husb2Sparkly's recipes - blood orange sauce

over tuna steak - probably some broccoli and basmati rice on the side...

Grilled the tuna on my george foreman grill, made the sauce - couldn't have been simpler. Even though the blood oranges were a little past their prime it was still delicious. Basmati rice & steamed broccoli worked well as sides. Thank you so much for not only sharing your recipes but taking the time to type them out in simple, clear steps that even a kitchen newbie like me can follow!

3. Hodgepodge of leftovers

Corned beef for hubby and leftover bbq ribs for me - leftover potato salad for both of us and some sort of hot veggie from a box.

I'm cleaning out our fridge so I can order a new fridge. It's getting to the point where sometimes I need to run to the store and get an item or two to go with what we have on hand. I'm enjoying the challenge.

Your dinner sounds like you're working out! A homemade baked dessert? Yes, you're putting in some effort there. Sounds really good!

Did you choose a stove yet? Which fridge did you get?

The meal itself was simple, so I figured a desert would make it special. Custard is easy, and bakes while the dinner cooks.

13. The fridge info

It's going to be an Amana french door style. I was at Lowe's a few weeks ago and got to talking to one of the sales guys. We need the fridge that's about 20 cu ft. and decided on the KitchenAid. I asked him if I could remove the water line that sticks out the back to help get the fridge very close to the wall. Can't use the water feature, so no loss. He asked me about the tight fit area in my kitchen and then said that the Amana 24.8 cu ft fridge will fit in that spot. We looked at the specs and sure enough, we can get the larger fridge! This is the one but I'm torn about what color to get. It'll be visible from the living room. The bisque is what I need to blend with other appliances and the sink and it'll keep things bright. No decision yet on the stove. That'll be next. I know I want that fifth burner in the center for big pots. Thanks for asking!

16. It's getting to be a must for me

Getting things out of the back, bottom shelves is an adventure these days. I figure I can always sit down and roll out the freezer compartment of the frnech door fridge to clean the it. I think these will get more and more popular as baby boomers age.

Good luck with the stove. I may be in the market for a new stove soon. I redesigned the kitchen, knocked out a wall and added an island for the stove. My stove is freestanding, not a slide in, so it won't work in the island x( I bought a nice one when I moved into this house thinking that it would be mine for a long time. Grrr!

4. I'm making pork chops baked in Cream of Mushroom soup

Brown them real good first. Spray Pam on a glass baking dish. Put a layer on sliced onions. Lay the chops on top. Put a family size can of Cream of Mushroom soup over the top and add 1/2 can of water. Cover with tin foil and bake at 350 for 40 minutes. Throw some potatoes in the oven at the same time and the Mushroom soup makes kick ass gravy for the baked potatoes. Easy, quick, and yummy.

18. Simple for Sunday.

I try to make a nice sit down meal for Sunday night, even invite friends sometimes, make it a little diner party. This week was more like a weeknight with desert.

Didn't go that well. My husband felt sick and went back to bed, leaving me with clean up. The kids were being picky and weird about eating, even though the food was relatively bland. Not easy being the resident chef sometimes, I am telling you!

I made a tri tip last week for the first time in forever and they were SO good! Costco had em at a reasonable price so there's more in the freezer to look forward too :bounce:

10. damn, I've been sitting here working all day and didn't take anything...

...out of the freezer. Damn! Oh well, maybe I'll open a bottle of wine and think about it a bit.... Didn't stop for lunch, either. Looks like maybe it will be a leftover scrounging night at my house.

on edit: HAH! I've got a pack of smoked pork chops in the 'fridge that haven't made it into the freezer yet. I think I'll cook one of those with some white beans and artichoke hearts. Toss a salad. AND open that bottle of wine.

19. Baked Chicken

I like to bake a chicken on Sundays. Butterfly it if I'm feeling ambitious, it really only takes 5 minutes. Throw it in a roasting pan, toss in chopped potatoes (not even peeled) with carrots, celery, and onions. Brush the whole thing with olive oil and rosemary, S&P. Throw it in a 450 degree oven. Sit down with a glass of wine and knit for 45 minutes to an hour. Everyone is impressed and I got so quiet time to myself. That's also one of my company is coming standards.

20. We did brunch instead...

The ex-Mr. Eyesroll and his wife (known to some of you as whoisalhedges and dolo amber) and her 5-year-old came over for brunch with my SO (not a DUer) and his three-year-old.

Pancakes, potato/cheese casserole, bacon, soy sausage, and fruit.

Dinner was hummus and pitas.

22. We've been craving 'Thanksgiving Dinner'

Last night, we had almost the whole thing, except I used chicken and no pumpkin pie.

I made everything from scratch, too. Generally, except on Thanksgiving, I'll take a few short cuts, but I threw down yesterday.
