Costco's Tortillaland uncooked tortillas.
These are the best flour product I've found, and other than I wish they had a whole wheat version, I think I'm in a serious case of like.

Spending my teen years in Arizona spoiled me - I could always get tortillas that were less than 3 hours old. I've been kind of iffy about the tortillas up here. But these... oh. Yeah. These are what I remember. Weeknight heaven is some cooked chicken, a few pepper strips, and a little cheese, all baked together on the hot griddle (I use an aluminum pizza pan).

But the best thing about them is that they're versatile: I used them today instead of egg roll wrappers, and they worked far better than the ones that the supermarket sells. I'm thinking about using them to make cannoli for Easter (and piping them full of chocolate whipped cream). They fry beautifully. Wetting the edges with some warm water and letting them stand for about fifteen minutes (while rolled up) keeps the seams together.

2. So......where are they in the store?
Are they in the bakery, the frozen or the fridge section. Give me a landmark....don't make me search!!!!!

5. Fridge section, right between bacon and yogurt in my store.
Milk and cheese are on one side of the fridge section, and the other side has hot dogs, sausages, bacon, ham, eggs, egg sub, yogurt and the tortillas.

And the packaging is turquoise. There are two packages of 18 tortillas for 4.49, so they're a bit more expensive than pre-cooked ones (the ones round here are about $1.19 a dozen) but they're Worth Every Penny.

Ooh. Looking at the site, they make whole wheat ones... Now it's time to get Costco to carry them.

and the average supermarket has limited varieties of bread and pasta but seemingly endless varieties of tortillas and chiles, most of them locally produced.

My own personal favorites come from a restaurant near me, flour tortillas made fresh and warmed on a griddle then bagged and handed over.

You can't beat those.

6. There's one place that makes their own tortillas within 20 miles.
Even the tortillerias use some sort of evil, refrigerated things that taste more like plastic than a bread product.

It's crazy - we've got a strong Hispanic community, but either everyone is making their own at home, or there are clandestine tortilla smugglers and tortilla rings (I can just imagine some guy with a Virgen de Guadalupe airbrushing on his truck palming a twenty and slipping a bag of tortillas to another guy with Jesus tattoo... "Hey, man, you want some whole wheat? You want lard or shortening? We got white flour and corn, too." ... You know, this could come to pass if the food Nazis ever succeed in banning lard and white flour.... I should stop letting my mind wander... it's too little to be out by itself. Anyway... ) , or people just put up with crappy tortillas.

These are within tolerances for fresh from the baker for me.

We also get the mashed up avocados right next to them. It's so awesome that you can freeze the avocados without incident and thaw them when local avocados are 1.99 a piece and sad looking.

Anyway, we occasionally have been known to make fab chips out of the flour tortillas, although its probably the only time we fry anything and we dont do it very often. You can also experiement with different cooking methods. If you bake the tortillas at a low heat they get gloriously puffy and are great with some hummus and homeade falafels. High heat in a non stick pan makes a great quesadilla.. and low heat makes the perfect fluffy fresh made tortillas.

Ive got to go to Costco.
