Does anybody here make coconut macaroons?
I bought a chocolate-dipped coconut macaroon at the farmer's market this weekend. It was phenomenal. Golden brown coconut robed in dark chocolate and sooooo chewy and tender inside. I'm no fan of coconut, and this cookie had me swooning. :blush:

I've never made them, but I understand they're not difficult. Please, somebody help me! There are so many recipes online... what's yours?

Also: What's the trick to dipping in chocolate?

(Would it be outrageous to ask if I can use the bagged sweetened coconut that's lurked in my cabinet since I opened it for a Millionaire's Pie in 2002? Oh, never mind, that's just gross: I'll throw it out tonight!)

This recipe makes a lighter, drier cookie. I sometimes add a tablespoon of flour to this for more texture.

I prefer this recipe which is a dense almost candy like treat

(I leave out the almond extract because I don't care for it)



I place cooled cookies on a rack and ladle chocolate over them. (I have a little candy ladle). Get the cookies nice and cold before you cover with chocolate.

2. The chewy, sticky ones are here. They're a bit sweet for me
but they're so easy I still do them once in a blue moon:

14 oz shredded coconut
1 can sweetened condensed milk + 1 tsp vanilla
2 egg whites + 1 tsp salt, whipped stiff

Mix coconut and milk and vanilla. Fold in beaten egg white mixture. Drop by spoonsful onto parchment paper lined cookie sheet (NO SUBSTITUTION, even silicone won't work) bake at 375 until golden and your house smells like heaven.

3. Similar:
16 ounces shredded coconut
1 can (14-15 ounces) sweetened condensed milk
2 teaspoons vanilla

Mix all ingredients together. Drop by teaspoonfuls onto generously greased baking sheets. Bake at 350° for 8 minutes. Cool coconut macaroons slightly; remove to rack.


I thought the recipe was so funny, I tried it. They were good!
