Mmmm Curry Chicken Salad
Oh I just had the best lunch. Yesterday I made some curry chicken salad, used the canned chicken I get at Costco, mayo, curry powder, celery seed, chopped Granny Smith apples and raisens.

Wrapped in a lettuce leaf! WOW it was so good!

get all white meat, or is it mixed? I have never bought canned chicken.

5. Yep, it's all white
and I always keep some on hand (this is California, after all -- earthquakes and all that).

It's better with fresh roasted leftover chicken breast, but hey, when you've got a craving and don't want to go out, this works really well

do you know who the Spindrifers are? Or maybe there are many? It's a new word for me, I'm reading a book about the organization called the Spindrifters

I didn't add curry, used leftover chicken, and added walnuts and red delicious apples.
Oh, and wrapped in a super fresh roll. Yum! I love it but do it rarely because I'm the
only one eating this stuff here. :eyes:
I'll have to try it with curry!

If you like the flavor of curry powder, then next time you must try it this way. Kicks it up a few brazillion notches for sure.

8. a local deli makes a chicken curry salad with cashews...
...and it's yummy. Lots of dried cranberries, lots of cashews. Mmmm!

9. Oh that sounds good too
When there used to be Good Earth restaurants around (where did they all go?) my favorite dish there was their chicken cashew salad. I'd get it served on a bed of spinach and topped with the poppy seed dressing.

Oh yeah, that was good. I have managed to recreate a fairly good version of it. It has to have alfalfa sprouts, jicima, sweet pea pods (or sugar snap peas) in order to really work. But without the fresh house rolls they'd serve it with, it wasn't quite the same.

11. I made curry chicken salad last night too!
Leftover roast chicken, mayo, Penzey's sweet curry powder, salt, mandarin oranges, grapes and cashews.

Chicken, low-fat mayo, reduced fat sour cream, curry powder, red seedless grapes, sliced almonds.
