Spontaneous Fruit Salad
It must be Spring, or something. Just had to get creative with a bunch of fruit, here's what I did:

16ox sour cream plus bag of mini marshmallows -- mix and overnight in fridge.

Next day, added (this was all improvisational, and I'm eating it now and it works really well!)

1 can mandarine oranges
1 lg can pineapple chunks
1 granny smith apple
1 red delicious apple
1 (or 2) bananas
a handful of dried wild blueberries (Costco rules!)
a cup of frozen (fresh if you got em) blueberries
a grated carrot
small handful of raisens
a cup or two of sliced fresh strawberries

Oh yeah, this is good. I know, the sour cream and marshmallows kind of make it not so healthy, but hey.. what can I say

(I was trying to satisfy craving for fruit salad and carrot salad at the same time -- succeeded)

2. My son thought I was nuts to add carrot
Also, the dried blueberries are similar to raisins in texture, they would probably do well in just carrot salad too

I think the carrot actually changes the whole dynamic of the dish, really puts it into that "not quite this, but not quite that" category. Works for me.

3. Dried fruit is AWESOME in fruit salad!
I love how dried fruit will absorb all the juice that begins to drain out of the fresh fruit.

I love to use a lot of raisins, blueberries, pineapple, diced mango. Of course, it all makes the salad much, much sweeter. But that's a good thing, right?

Another yummy treat is to sugar some chopped pecans on the stove and sprinkle those on top of the salad just before serving.

I'm hungry now.
