Is anyone having a big Easter fete this year?
I just want to read about it; we're doing ribs. I miss my family on holidays, and an Easter brunch was something everyone looked forward to when I was growing up. My grandma Mimi sure could throw a party! :-(

1. No, we're not .... sadly ......
We're not overly religious (although we're both more than sufficiently spiritual) and our kids are waaaaaaaaay too old for an Easter Bunny thing. (We're at the grandparent age :) ) The kids are all scattered tomorrow, so it will be just Sparkly and me. She'll be vegging tomorrow as it is the last day of her Spring Break. I'll be working cuz I have to prepare for an early morning meeting on Monday.

2. not me-- I don't celebrate most christian holidays anyway...
...and since I spent all day today doing my taxes, I'm really not in the mood to entertain tomorrow! Actually, now that I think about it, one of my grad students is probably coming over to work on data analyses for her thesis tomorrow anyway.

11. OOoh, I sent my taxes in on Thursday
which means last year's, state taxes, estimated quarterly taxes, and the end of my pop's stuff. I've barely started on the 40 page inheritance tax form, a nuisance since I didn't inherit nearly enough to pay any of it.

Next year I'm going to hire somebody.

3. We're having the in-laws, about eighteen people at noon
Nueske's old fashioned boneless ham, a small turkey breast and two quiches

Scalloped potatoes (can't wait for these, my sister-in-law uses goat cheese), wild rice (it's a Minnesota thing), dinner rolls

Fabulous fresh fruit salad - my 83 yr old mother-in-law is bringing it and called to say she even got hold of some 'mongoes!'

Asparagus with lemon butter, minted baby carrots and one other veg a guest will bring

Easter candies and desserts - in-laws bringing all manner of sweets

We're trying a new mix for one of the beverages using Costco's delish pomegranate juice and mixing it with lemonade.

6. Just the two of us as usual but...
I got a small ham to make Virginia style, cole slaw and a couple of sweet potatoes to bake plain.

We just finished coloring some eggs. Not the "Martha" way. They make it so easy these days. The tablets into a cup with a few tablespoons of vinegar or lemon juice. When the tablet stops fizzing, add the egg and roll it around. I'm going to get a few boxes when they go on sale Monday. I could use the lift of colored eggs every so often.

I miss the old holidays even though I'm not religious. Just the getting together. Most of all I miss having breakfast with my mom the day after. Cold ham, a hard boiled egg, potato salad, slaw and a pot of hot coffee!

9. It's the leftovers, isn't it?
Yeah, I'm with you on the day after - the ham, salads, hot coffee, good conversation.

That's why I got a precooked ham and stocked up on Costco's red bliss potato salad (it's better than anything I ever fixed) and some other stuff.

Even though they're all gone, I can have some nice talk with them tomorrow...............

7. Before I was married, and while my parents were still living,
we used to always go out to eat at some fabulous brunch being served at some wonderful restaurant. It was usually a traditional Easter fare, ham, lamb, etc......

However, tomorrow, after church, we will be dining with my in-laws at a small neighborhood Indian restaurant that we all just love. While non-traditional, it will be scrumptious! And no clean-up afterwards!

None of us are religious, but it's an excuse to get together and eat lots o' good stuff...

I'm making an Italian Easter Pie in the morning (it's sort of like a big calzone) and I'm taking it along with a Caesar salad.

We don't need a excuse to get together but my family always gathers on holidays. We actually like each other and enjoy being together. Imagine that.

My sister will be the hostess for 12 of us. She prepares the typical Easter food of ham, kielbasi, paprika bacon, potatoes and steamed cauliflower. My daughter and I made about 5 dozen ravioli so we'll have some of those too. We're having birthday cake (chocolate with peanut butter icing) since the daughter's birthday was last week. By tomorrow night I'm sure we'll all feel like slugs.

13. Well speaking of slugs.....I feel like one already
I made the huge dinner tonight so we can just eat left overs and chocolate on Easter. I did a great big green salad, salad Caprese because it's my favorite, a beautiful Prime Rib, Sauteed mushrooms, enough mashed potatoes to feed an army (with gravy of course) and a pinapple/coconut Blondies for dessert. I'm stuffed and exhausted. All this talk about ham though makes me regret not getting one just for the left overs. I'm craving ham and eggs now and I'm not even hungry.

19. Truthfully
I'd much rather have prime rib but we usually have that for Christmas dinner. I've already picked up a bag of split peas to make a pot of soup. Leftover ham has so many possibilities.

I usually only do it on Christmas as well but our market had beautiful natural, grain fed roasts on sale for $5.99lb. Still pricey for a seven pound roast but I've never seen it cheaper so I succumbed to impulse. It was wonderful

14. My whole family is in town at the same time
So we had a feast on Fri of snow crab legs, fried shrimp(took me forever to fry and thank goodness for the warming drawer!), mom's octopus stew, clam chowder, bacon wrapped scallops, cole slaw, shrimp/ macaroni salad and fried fish with redwine vinegar, boiled potatoes, and a big pot of baccalao. Many bottles of wine were consumed and I had a fierce hangover today.

Today we went to my moms house for another get together and had ham, deviled eggs, turkey, lasagne, salad, potato rolls and a gazillion deserts. After swimming in the pool and eating I came home and took a long nap.

Everyone in my family cooks and brings their dishes to our get togethers so we always end up with a ton of food.

Tomorrow I have a twenty one lb turkey to fix for my hubby and his brother who is living with us temporarily. I am looking forward to a quiet meal and need a crash diet to start on Monday! But then again..those turkey sandwiches will be calling me.

16. I've re-discovered the perfect Easter dessert
A couple of months ago I started making chiffon cakes again. A chiffon cake made with fresh Valencia orange juice and zest is nigh onto heaven for Easter. I'm about to head for the kitchen and whip one up. Mmmmmm.

It's turkey here tonight, and three pounds of asparagus, and sweet potato buttermilk biscuits made from Bobby Flay's recipe (can't stand Bobby, but love his biscuits!). A carrot salad with fresh dill, some stuffed mushrooms, some home-creamed corn ..... and whatever else I can concoct.

And that's AFTER the neighborhood block party brunch.

17. I have a Smithfield butt ham for the oven this afternoon
I hope it isn't too salty like last time. I'll rinse it real good first. We dyed eggs with our granddaughter last night(She's 5). The Easter Bunny left a basket. She's going to hunt Easter eggs with her Mom at her Uncle's house.

"Easter Egg" flan (decorated with berries)

It's just my parents, SO, his daughter (she won't touch the fish) and me.

Yesterday, I made Thai food for seven.

We just moved here Thursday.

I am insane.

we've been packing stuff up and moving stuff out prior to getting it ready to sell

today we finsihed rearranging the den and living room, Mr K is starved and I'm tired.....

27. Reading all the posts make me hungry, so had to make some toast with honey
I spent the day alone, everyone is scattered about this year, and I am doing some packing and discarding. Am downsizing and moving across town within the next month or so.This is not too fun, trying to get rid of things. But it will be a relief once the work is over. Sort of exciting but have moved so many times through the last many years that I have decided , This is it!!! I will still be able to garden a bit, but no more huge areas to take care of. A big plus. Anyhow. pulled some spaghetti sauce out of the freezer and had pasta and ciabatta bread. Tasted pretty good. Just worked on and thought about all the wonderful Easters of the past.

28. Just the two of us this year..
We moved hours away from everyone we know 6 months ago.. so this year it was just the two of us. My FIL is coming to visit on Wednesday, so I'll cook more next weekend. It seems like we have been in perpetual motion so we really needed a weekend of relaxation. On Saturday I made chicken with long rice (aka bean threads) and for the husband, tofu cutlets with gruyere that werent nearly as good as the ones Quorn makes. Quorn is a godsend to me since I hate tofu, except when perfectly fried aka fattening as all get out... it gets tiring making two meals every night.

I did a Potpie with Cheddar sauce, veggies and Quorn, challah and some Lavender brownies.
