ham spread, split pea soup, scalloped potatoes......
I have too much ham left. what else do the good people of the forum recommend? I would be esepcially interested in regional ideas for the Easter leftovers. My mom only dyed one egg for each of the girls so just a small batch of deviled eggs. That's the only way I've been able to use those. I gave the leftover sweetpotatoe pie to daughter's boyfriend. That took care of that. LOL! Mom finished the wine, so no leftovers there.

7. ham loaf -- my favorite!
It's delicious. Made with ground ham, some ground lean pork, some fresh bread crumbs, a bit of dry mustard and an egg, I think. Then there's a glaze for basting, made of brown sugar, vinegar and mustard. Oh, it's just fantastic. Mmmmmmmmm!

9. Croque monsieur is a great way
to use ham. Thin slices with some cheese--Monterey Jack or similar. Grill them in a waffle iron if you don't have the appropriate panini-toaster gadget.
