So, I bought some ground hot sausage. What could I do with it,

So, I bought some ground hot sausage. What could I do with it,
besides spaghetti sauce? I just threw caution to the wind, never having bought sausage in any form other than encased.
Any ideas out there in foodie land?

I tend to always mix my ground sausage with ground beef for things like meatloaf or meatballs or chili.

You can brown it up and add it to eggs for an omlette

Add it to stuffing. Mix cooked sausage with a package of flavored bread stuffing, a browned diced onion, a diced apple, raisens, peacans or cashews, two eggs and a stick of melted butter..

Brown it and use it as a pizza topping or in a quiche.

Make patties and have it with eggs and toast


Scotch Eggs. From foody.com

340g (12oz) Pork Sausage Meat
4 Boiled Eggs, shelled
1 Egg
55g (2oz) Dried Breadcrumbs
Pinch Mace
Salt and Pepper
Oil, for deep frying

Mix together the sausage meat and mace in a large bowl, season to taste.
Divide into four portions, flatten between hands, place an egg at the centre of each portion.
Wrap the egg evenly in sausage meat.
Beat the egg.
Dip each covered egg into the beaten egg, then into the breadcrumbs, press the breadcrumbs on firmly.
Heat the oil to 190°C: 375°F.
Fry the covered eggs until golden brown.
Drain well.
Serve hot or cold.

I have a confession; I don't own mace of any kind! What does it taste like? Those Scotch eggs sound awesome; have you ever made them, or eaten them?
You must have a willing family to eat these wonderful creations! My husband, not so much. HE frowns on quiche.

You can leave out the mace. (It's kind of like clove...you can substitute with that...but I think it's better to just leave it out).
If you want to make them healthier....You can bake them in the oven. I've even left the breading off all together and just coated with sausage and baked.

My SO is a very able eater. He has few dislikes (Only most seafood). My daughter is a little more challenging (no tomato, mushroom or egg dishes). I cook as I please for the most part and if they don't like it there's usually a box of cereal on top of the fridge. :hi:

For any kind of Italian dish, I tend to use sausage instead of hamburger. Meatballs are so much tastier with sausage, imho.

6. I've had people turn their noses up when I mention this recipe,
but it has turned out to be the most requested side dish at our company picnics. Even people who have never liked hominy before like this dish.

HOT HOMINY CASSEROLE

Brown 1 lb. hot sausage. Add one chopped onion, one chopped bell pepper and cook until onion is translucent. Transfer to 9 X 11 baking dish or 2 qt. casserole. Add two cans of drained hominy, 1 can cream of mushroom soup, 1 8 oz, jar of Cheez Whiz or 8 oz. Velveeta cheese, chopped pickled jalapeno peppers to taste and mix well. Bake at 350 degrees for about 25-30 minutes or until hot and bubbly. If desired, sprinkle with grated cheese for the last few minutes of baking.

7. Fry it with garlic...
Add some sundried tomatoes, maybe some mushrooms and some sliced olives. Add a bit of olive oil. Toss in some hot cooked pasta, I like penne best. If you have fresh basil, add that as well.

This is my husbands favorite meal. I don't make it as often as he'd like because it's a little on the fattening side but it is yummy!
