I love it when a plan comes together!
9AM: Stick a can of stewed tomatoes, a frozen half of a chicken with Season Salt, Italian Seasoning, Black Pepper and Mrs Dash in the crock pot on high

Noon: Quarter a red onion, slice two stalks of celery and add to crockpot with a 1/2 tsp of minced garlic, turn over carcass and fill cavity with celery and tomato and lower temp to Low

3:30PM: remove carcass from crock pot and put on cutting board, take all the saucey soupy stuff and put into a skillet with 2 chicken bouillion cubes, a few dashes of Balsamic Vinegar, a squirt of honey and a can of Tomato Paste. Simmer

4PM: put water on to boil for pasta, de-bone carcass keeping the meat is as big a pieces as possible. return to sauce and adjust spice (add more Italian seasoning)

Cook Pasta, spoon yummy chicken stuff on top

EAT!

3. Here's my take on it.
3 boneless,skinless chicken breasts in a frying pan with 2 tablespoons of butter and 1 onion chopped.

Heat on medium heat for about 15 minutes, turn the breasts and stir the onions frequently.

Then:
add 6 tomatoes, peeled,seeded,and chopped. (I used canned italian tomatoes infused with basil)
add 1 celery stalk chopped.(add more if you like)
add 1 carrot chopped.(again, add more or less as you like)
add 2/3 cup water or chicken broth, or white wine. (I prefer the white whine, tastes awesome.)
add sliced white mushrooms (optional, just add as much as you like)

Then:
cover and simmer for 45 minutes or until the chicken is cooked through. Sprinkle in a sprig of chopped parsley and season with salt and pepper.

This is kind of a mix between a few different regional takes on the dish, but this is the way I love it. I think you will too.

4. that sounds wonderful
but I wanted to use the half chicken I had in the freezer and not have to futz with it much

the crockpot was my friend yesterday!

5. You can cut it up and use the same recipe next time around too. Normally
it is done with a whole chicken, I just use chicken breasts cause it's easier to buy them at the store and quicker to prepare.
