What's for supper - the 9/5 edition.
I must admit I was tempted by someone else having tacos a few nights ago so tonight it is tacos with refried beans and rice.

What will be on your table tonight?

1. Used food
My BIL and his wife came up from California this weekend to get my DH's old pickup that we sold to them, so we barbecued. Lots of leftover chicken, spanish rice and pinto beans, plus most of a Costco sized container of spring mix for salad.

4. Just soup & bread & cheese...
...since we're up for a late run to the airport to pick up our company. I'm making my easy-peasy pasta e fagioli, with canned cannelini and garbanzo beans, fresh veg from the Farmer's Market today (zucchini, onion, maters, celery) and rotinis, in chicken stock with a few fresh herbs and a smidgen of garlic.

We'll stop at the gelato store for dessert before we head down to Albuquerque to the airport.

tomorrow will be left over gumbo on a new batch of rice with salad. I'll be ready to cook again about Friday.

10. Roast Chicken Hash
Saute Onions and Potatoes until soft and browned
take off 1/2 the meat from a store-bought roast chicken
Throw in saute pan.
Season with salt,pepper,garlic powder, thyme, parsley and tarragon
add blob of butter/smart balance - whatever you use
cover with heavy cream
turn when crisp and brown

serve with green salad and Bob's your uncle!

13. We got home late, and needed something quick...
So I just made Tandoori Masala peroghies, and we finished
the apple crisp from last night for dessert.

Not exactly haute cuisine, but darn good for 15 minutes of effort.

I love peroghies. Usually saute them up with onions and garlic and shrooms. Yours sound really exotic.

20. Lol! Nothing exotic, it all comes out of a box.
I just use 'Mrs. T's" brand frozen potato/cheddar peroghies,
thaw in boiling water and then fry in butter.

While they're frying I sprinkle on about 1 tablespoon
of "Rajah" brend Tandoori Masala spice mix. Great flavor,
and gives them that nice red Tandoori color.

15. A turkey sandwich.
DH went up for the Tuesday Boys Burner and Anime night (our guy friends get together once a week, make excessively spicy food and have their capsicum-transcendence then watch anime or boy-flicks) and I'm having a quiet, relaxing night by myself with Lord Peter Whimsey and Miss Harriet Vane, a turkey sandwich, some local potato chips, a new crop apple, and some nice iced tea. It's nice. I think all married people should do this - I know DH is a much happier camper and a far better conversationalist when he has things to talk about other than the fact that the people he works with are morons.

16. Braised Tofu
I like to bake my tofu so that it soaks up all of the flavor in the marinade, but it's still too hot to turn on the oven, so I braised it instead. Almost as good, just lacking in the chewy texture that baking lends to the tofu. I served it with stir fried broccoli, red pepper, mushrooms and scallions. I forgot to put on the rice before I put my tofu to braise, so I served it over noodles. :9

18. amazingly...
...it was tacos, refried beans, and corn. It seemed like a "back-to-school" meal. I recall the days when the first day of school meant chili and cornbread and carrot-raisin salad, but it's just too warm for that.

The best part was the Early Girl tomatoes picked not ten feet from the porch table.
