Tasty breakfast
5-minute cooked oatmeal with organic grade B maple syrup. Quasi-huevos rancheros with scrambled eggs, flour tortillas (my wife is avoiding corn, she's nursing our 5 month old and corn makes him gassy), extra sharp chedday, and Newman's Own salsa. Tasty, if hardly traditional :)

Now I am off to brew a giant mug of rooibos to fortify me through a morning of programming in Labview.

1. Sounds great.
I skip breakfast almost everyday. I know I shouldn't but I do. A week ago I made myself a promise to start having a bowl of cereal every morning but I have yet to do it. Admittedly, it does not help that I am not a morning person and I must get up every morning to drive the kids FORTY minutes to school!

2. I prefer long-cooking steel cut oats, so I usually cook a bunch...
...on the weekend, then refrigerate it for microwaving during the week. I usually throw some frozen mixed berries and a tbsp of splenda into the microwave first to make a low-cal fruit syrup, then nuke a bowl of the prepared oats. Top with fruit, maybe a little half-and-half.

I make the same sort of quasi-huevos rancheros, too, although I fry corn tortillas and the eggs-- they're only non-authentico because I use a bottled salsa, but they're as good as the ones I've eaten in many a restuarant in Mexico!

3. Real oats are yummy, and very easy if you just...
...put them in the crock pot on low before you go to bed. I bought one of those mini-crock pots just for that!

I put them in with some dried-berry mix, or raisins, and a couple of chopped walnuts. In the morning, splash on a tbsp of 1/2 & 1/2 and a little brown sugar and breakfast is a veritable FEAST.
