9/13 Wet Wednesday Edition of What's For Supper?
It is raining down hard here. I am thinking of making stew. Soup is always nice on a wet and rainy day.

What will you be consuming tonight?

5. Armadillo Nachos
were from the infamous Armadillo World Headquarters here in Austin(1970-1980). Fresh whole corn tortillas, lightly crisped-then spread with refried beans, sprinkled with a handful of jack cheese and jalopeno slices on top. Baked at 400° for 5 minutes and served with cold beer on the side.

4. Halibut - if I can get it thawed out in time!
And probably some sort of rice dish on the side. If the halibut thaws I'll marinate it for an hour in homemade teryaki.

8. Casserole of chicken, ...
steamed purple cauliflower with herb butter, and a nice veg salad. Fortunately my company is incredibly accomplished at making yummalicious salads so I don't have to putz with that. I love eating salads but find diddling with the veg incredibly boring.

Simple chicken casserole, cut up a couple of chicken breasts into chunks, dredge them in a little seasoning, brown them slightly in some very hot peanut oil, take them out and set them aside, make a medium roux in the pan, pour in some stock and swoosh it around, put the chicken back in with a bit of onion and some peeled, blanched new potatoes cut into quarters, cover the dish and put it back in the oven for 30-40 minutes on 325. Take it out and pour a drollop of room-temperature heavy cream in, swoosh it around and let it rest, covered, on the stovetop for 5-10 minutes.

13. Any time, darlin'...
...it would be better with dark meat but I only had breasts. Otherwise, it works just fine, impressive but easy. I seasoned with a mix of paprika, garlic powder, salt, bay leaf, black pepper and a little thyme, but it works with just about anything. Curry, italian mix, whatever.

There were no leftovers, heheh.

9. By the way, I LOVE these daily "what's for dinner" threads...
...cause I get inspiration by the gobs from them. It's a wonderful place to steal ideas, or to notice that I'm not the only one too lazy to cook a "real meal" every night, etc.

12. Subs from the sub shop, chips and apples.
I spent today canning - peeling and coring apples, and shredding zucchini. Tomorrow will be more of the same, except peaches and tomatoes.

Gotta get that nice produce under glass while I can!

...and then simmered for an hour with a jar of sauerkraut, and leftover mashed potato patties fried crispy in butter in a cast iron skillet. Oh, and small sauce dishes of homemade stewed tomatoes. For something cold and crispy, some pickled beets and a fresh veggie plate.

Lemon coconut bars for dessert, and they were really good with a toasted coconut shortbread base.
