I love Mexican and Italian food so my burritos are mostly Mexican with some Italian influence.
I get canned refried beans and store tortillas and salsa. I brown ground beef, sautee onions, green pepers, garlic, and mushrooms. Mix with a large can of refried beans, large pitted black olives (sliced), salsa, beef and the veggies. Also add grated cheeses (cheddar, colby and/or monterey jack) Wrap the mix in the tortillas with cheese. Put canned tomato sauce (I have also used canned tomato soup or leftover spaghetti sauce) that I doctor with chili powder, garlic powder and Italian seasonings in the bottom of the pan and then cover the burritos with the same and grate cheeses for the top (same cheese/s as above).
I usually make spanish rice as a side dish, and last time added a little leftover rice to the bean mixture for the burittos.
Any suggestions on additional veggies? Has anyone tried chicken? (It doesn't sound appetizing to me, so I've chickened out on substituting chicken for ground beef, so far). I may try hot Italian sausage instead of beef one day, though.
