I know some great recipes are really decadent and not exactly healthy, but I have discovered some of my favorite HEALTHY recipes since I have been working to losing weight.
One of my favorite easy, yummy dishes is pita pizza. I buy whole wheat pitas, then top with sauce, lots of veggies, maybe some chicken or canadian bacon, and mozzarella and pop it in the toaster oven. It's a great diet-saver, because it fills my pizza craving while still being healthy.
Homemade chicken veggie soup is another of my diet favorites, because I can freeze it in single servings to bring to work for lunch. For that, I boil 3 or 4 bone-in chicken breasts with a couple of bouillion cubes in enough water to cover the chicken. I add a sliced Healthy Choice Smoked Sausage link, bay leaves, garlic, and some Tony Chachere's seasoning. I add a quartered onion, some chopped carrots, celery, mushrooms, spinach, and/or any other veggie you like, and a can of diced tomatoes. Remove the chicken when cooked through, cool, pull of the meat and add back.
The cool thing about making soups is that once you feel comfortable with a couple good recipes, it's easy to make things up as you go along, so you can use whatever you have on hand. This year, soup has become one of my favoite things to make:-)
The white chili recipe posted in this group looks wonderful and very healthy too, and I will be trying it this weekend.
Anyone else have some favorite healthy recipes? Moderately low in fat, or with good fats, whole grains, lean meats, veggies, etc?
I'm at a stage where I need to add more variety to my diet, or I will get bored with it, so I thought I'd ask for your favorites:-)
