More cookie talk - Hazelnut Cookies
I just made a batch of these Hazelnut Cookies. ---> http://www.epicurious.com/recipes/food/views/109469
Kroger carries the nuts in the baking section. Very easy since they're put together in the food processor. One of the reviewers advised to have the cookie sheets chilled.

Mine flattened like most cookies and they were very crumbly. I sprinkled sugar on them while on the cookie sheets after they cooled for 2 minutes. Then I picked them up off the sheets with a very thin metal spatula and nudged them onto the cooling racks.

They're still delicate after they cool and literally melt in your mouth. They aren't very sweet and I liked that. The baker suggests having them with coffee.

1. I love hazelnut anything.
Sparkly ..... not so much.

There are a great many Italian confections that use hazelnuts. None of them are overly sweet. Like you, I like it that way.

2. I love hezelnuts right out of the shells
But I've never baked with them before. Now I want to make some oatmeal cookies with raisins and some of these chopped out of the bag. I'll toast them a little, first.

Got some in my fridge in the shell. Anybody have any easy easy way to "de-shell" them?

5. I just use an old fashioned nut cracker
That or a hammer. I've found that they pop open fairly easily.

6. Thanks, I really haven't
tried that. I just got the hazelnuts and made an elaborate recipe. The crust called for ground hazelnuts, shells and all. I did grind them very fine, proceeded with the recipe, and the crust was not very good. As a matter of fact, it was just awful. I was so disheartened, I haven't made anything with the remainder of my hazelnuts yet.

8. Shells and all sounds odd
But I don't know much about cooking with hazelnuts. You were a trooper following the recipe to the letter.

I'm going to use the rest of the bag of hazelnuts for chocolate cookies since their so good in Rocher candy.
