What should I bake for the Super Bowl party?

What should I bake for the Super Bowl party?
I'm attending a Super Bowl party that's technically also a chili cook-off, but I have offered to bake something instead. Probably a dessert.

So, any suggestions? By all accounts, there are going to be a bunch of people there.

1. Nanaimo bars?
They're a little different than brownies or cookies, everyone loves them, you don't need a bowl or plates, & they're fairly easy. If you want I'll give you the recipe I use or maybe someone has a better idea.

7. here you go
Bottom Layer:
1/2 cup butter
1 tsp vanilla extract
5 Tbs unsweetened cocoa
1/4 cup sugar
1 egg, beaten
2 cups crushed graham crackers
1/2 cup shredded coconut
1/2 cup chopped walnuts

To make bottom layer: in a large double boiler over barely simmering water, slowly melt the first 4 ingredients together. Add egg & whisk until blended. Remove from heat & cool
Stir in graham cracker crumbs, coconut & chopped walnuts. Press the mixture into a 9-in square cake pan.

Middle Layer:
2 cups sifted powdered sugar
4 tbs unsalted butter at room temp
2 tbs instant vanilla pudding mix
2 tbs milk
1 tsp vanilla extract

To make middle layer: Blend together the powdered sugar & butter. Mix together instant pudding, milk & vanilla. Add to the sugar mixture & pour over the bottom layer. Chill

Top Layer:
4 oz semisweet chocolate
1/4 cup butter

To make top layer; Stir the chocolate & butter in a double boiler over barely simmering water until smooth. Spread on top of the middle layer & chill for at least 1 hour before slicing.

My notes:
It takes a lot more than 2 tbs milk to get the middle layer to be spreadable. Also, the egg in the bottom layer is really not cooked so I get pasteurized eggs from the market. I always double the recipe, but they're pretty rich.

3. My son is often the designated chef at such parties
and has also been to them where it is a cook-off of some sort. The last was a wings cook-off for which he came to me for secret ingredients.

My sense is that it will be a testosterone filled atmosphere. You need either a compliment to, or an antidote for, that.

Lemme think about it ......

6. Better than Sex Cake
I made this one for our AFC Championship party. Make it the day before and refrigerate. Found it on All Recipes.

INGREDIENTS:
1 (18.25 ounce) package German chocolate cake mix
1 (14 ounce) can sweetened condensed milk
2 cups hot fudge topping, heated
1 (12 ounce) container frozen whipped topping, thawed
4 (1.4 ounce) bars chocolate covered English toffee

--------------------------------------------------------------------------------

DIRECTIONS:
Bake German chocolate cake mix according to package directions.
While cake is still very warm poke holes in top of cake with the end of a wooden spoon, poor sweetened condensed milk over top. Let cake cool. Pour hot fudge topping over top of cake and let set. Spread on whipped topping and garnish with crushed Heath ™ Bars (toffee crumbles).

9. I've had this cake before
and it is absolutely delicious! BUT "better than sex"?? A-a-a-a not so good. Now WITH sex?? LOL, something for the to-do calendar.

11. Oh I agree!
I've made other "Better Than Sex Cake" versions before, but just found this one. It made my teeth hurt to read the ingredients :-).
But it was delicious.

8. How about a simple Gooey Cake or Apricot Almond Squares
The Gooey Cake is really simple and VERY rich tasting and always gets people asking for the recipe. You'd probably want to cut it in to squares no larger than a brownie. The Apricot Almond Squares are along the same lines but one step above.

Gooey Cake

1 box yellow cake mix
4 eggs
1 stick of butter melted
1 lb box of powdered sugar
8 oz creamed cheese

Mix together the dry cake mix, 2 eggs and butter with electric mixer (it will be very thick). Spread the batter into a 9x13 greased and floured pan. Blend remaining 2 eggs, powdered sugar and cream cheese.
You can use the same bowl and beaters, no need to clean them. Pour over batter and bake at 350 degrees for 35 minutes of until the top as a brown glaze and pulls from the sides of the pan. Cool fully on a wire rack before cutting.


Apricot Almond Squares

1 box yellow cake mix with pudding
1 stick of butter melted
1/2 cup finely chopped almonds
12 oz jar of apricot preserves
8 oz creamed cheese
1/4 cup sugar
2 Tbsp all-purpose flour
1/2 tsp pure almond extract
1 large egg

Mix together the dry cake mix, melted butter and chopped almonds, with electric mixer on low, for about 1 1/2 minutes. The mixture will be crumbly. Save out about a cup of the crumbs and press the rest over the bottom of an UNgreased 9x13 pan. Spread the preserves over the top of the crumb mixture and set aside.

Using the same bowl and beaters, blend the creamed cheese on low for about 30 seconds. Add the sugar, flour, extract and egg and blend on low for 1 to 2 minutes. Spread the mixture over the preserves, covering to the edges. Scatter the 1 cup of reserved crumbs over the top. Bake at 350 for 33-35minutes until the crust is golden and the filling set. Cool on a wire rack for at least 30 minutes before cutting.


Tip: for the wire rack....I have a gas stove so when I'm baking, before I turn the oven on, I take as many grates off the stove as I'm going to need and put them in the laundry room on the washer/dryer and do my cooling on those. Or if I don't need all the racks in the oven, I use one of those racks stacked on some tuna cans.

12. Amazing Ricotta Cake

2 lbs. ricotta cheese
3/4 c. sugar
3 eggs, lightly beaten
1/2 teaspoon pure vanilla extract
1 (18 1/2 oz.) pkg. yellow or lemon cake mix with pudding
Mix together the ricotta cheese, sugar, vanilla and eggs. Set aside. Prepare the cake mix according to the package directions. Pour into a greased and floured 9 x 13 inch pan. Carefully spoon the ricotta mixture over the batter. Bake at 350 degrees for 60 to 65 minutes or until cool.

I have also added sweetened coconut to the ricotta mixture which is amazing if you like coconut. I sometimes top this with drained canned crushed pinapple for a pina colada taste.

This cake is very moist and amazingly yummy. If I make the coconut free version I use some fresh strawberries mixed with a little sugar as a garnish.

13. all time party hit
Every time I show up with this sherry cake, the stadium comes alive. <grin>

1 pkg. yellow cake mix
1 sm. pkg instant vanilla pudding mix
3/4 cup salad oil
3/4 cup cream sherry
5 or 6 eggs
1 TB grated nutmeg

Beat together, pour into a buttered and floured tube pan or bundt pan. Bake at 375 until a toothpick comes out clean. Cool, remove from pan, and cover liberally with powdered sugar.

I may have to make one tonight.
