In a large pot, bring a few pork ribs to a boil in 2 cups or more liquid. Add plenty garlic, some salt, some pepper. Pull out and set aside, slather with your fave BBQ sauce. Cover. Save the water for the next.
Saute, olive oil or butter, coarse chopped 1/2 sweet onion, 2 inches celery and 1 garlic till soft and fragrant. Add 2 chopped tomatoes. Throw into the pork water. Bring back to a boil, add 1/4 cup lentils, 1/4 cup black eyed peas, 1/4 cup rice. Set to simmer.
Turn on the broiler or a BBQ to brown the pork.
Turn the pork to coat again and throw it on to brown. Actually, it's best to burn it here.
Plate in the usual way. Thin slice the pork, across the grain, side with lentils, etc., garlic bread, cole slaw if you've got it on hand, ice tea, beer.
It's really a good meal.
