'Potato' salad, light

Just a suggestion for the summer months. I usually make up a bunch of this salad that gets
added to various meals eaten throughout the week. It's a very healthy form of potato salad
BUT you use cauliflower instead of potato. Tastes very much the same but lighter (on your
wasteline and tastebuds).

Just break up a head of cauliflower into small florettes and stick them in a steamer with lid.
Don't let them steam too long or they'll get mushy and you want them to keep their form. Immediately after steaming put them in some cold water to prevent them from continuing to cook, and stick in the frig while you gather up and prepare other ingredients. (If you do end up with mushy cauliflower, consider making 'mashed' faux potatoes instead).

For me that means finely chopped onion and celery, mayonaise and mustard, chopped pickles, salt and pepper.
Just use whatever ingredients you normally do to make potato salad.

Now chop the cold cauliflower florettes and add the other ingredients.

If sealed properly it will easily last the week in the frig.

This is great with barbeque, hamburgers, chili, grilled fish, etc.

I'll have to remember this, altho I suspect that the lions share of the fat and calories are likely to be in the dressing, rather than the potato, no? ;)

2. It's for the carb watchers.
Or as some say, the 'no white diet'.

Probably not the best name since cauliflower if also white..lol.
