We had a good time at the Austin Super Bowl Party at GopIsEvil's house

I brought some deer meat and a dip. First the dip. Here's how I made it:
Start out by spreading some lime/chile refried beans in a serving dish



Add diced tomatoes



Put a layer of guacamole. They have avocados 3 for a buck right now.



Put on some diced onions



Add a layer of shredded Colby/Jack cheese



Top it off with sour cream lite(regular is fattening):wow: Add olives on top too and put it in the icebox to get real cold



For the deermeat I microwaved some 50 - 50 spicy smoked deer sausage



Cut them in half the long way for tortillas



Sliced green peppers and tomatoes to put in the tortilla with them



I microwaved some more deer sausage and cut it into bite size chunks



Now for my favorite the deer cubes. Start with venison backstraps



Cut them into good sized cubes. Beef will work too



Let them marinade with Lawry's Herb and Garlic marinade in a ziploc baggy in the bottom of the icebox for 2 hours



Slice your jalapeno while the deer meat is marinating. I just filet the outside of the jalapeno off so as not to touch the seeds or veins since they have most of the oils and heat. VERY IMPORTANT - Wash your hands really good after handling jalapenos. Do not put in contacts or use the restroom without washing your hands first. :grr: It will burn



Cut a pack of bacon in half



Get your marinated deer cubes out. Poke a hole with a filet knife through each one and shove a jalapeno slice through it. Wrap it with bacon and use toothpicks to secure the bacon. Put them in a dish and put the remaining marinade on them



Make sure your charcoals are good and hot and put your deer cubes on. Stand out there the whole time because the bacon can make the fire flare up on you in a hurry



Turn them constantly to try and get them done evenly. Bring them in and let them rest



I sliced some deer hard salami to take with too.



With this and GopIsEvil's humus, wings, and cumin chicken, we had a feast.

By the way, put up any picture of any sausage, and I'm there! That stuff looks GOOD!

3. I worked on the food from 7:00am until about 1:30pm.
It was a lot of work, but everybody liked it so it was worth it.

5. the bacon wrapped venison tenderloins look good!
for the dip, do you mix taco seasoning in with the sour cream? Thats what I do.

7. Here's my version layered in order
Refried beans
guacomole
sour cream mixed taco seasoning (the commercial stuff from a packet, to taste)
cheeese (Sargeanto has some new flavored ones out)
chopped tomatoes
sliced olives

I leave the onions out.

Same as yourn' only different
