Baked Catfish ala Newton
I created a new way to cook catfish that I liked and so did my lady-friend.

First saute some garlic and onion in butter.

Once it is translucent, pour the mix over a couple of catfish fillets in a Pyrex baking dish.

Next sprinkle over the fillets some Weber Zesty Lemon Seasoning.

Then take a can of Trappey's Stewed Tomatoes and Okra and pour it in a blender. Pulse on PUREE until it is broken up into smaller bits, but not necessarily liquefied.

Pour over the catfish.

Bake 25-30 minutes in a 350 oven.

When the fish is cooked, remove from the oven and sprinkle some lemon juice and Crystal hot sauce over the fish and serve.

It's yummy to us. YMMV
