Conversion: Caked Yeast to Granule?
Hi all -

So I picked up what I thought looked like a fabulous little baking book at a sale, and then realized most of the recipes call for cake yeast - nearly impossible to find except around the holidays, and even that's pretty iffy.

Any idea what the substition/formula would be to use dry yeast?

1 oz (cake) or compressed yeast = 1/4 oz (2-1/4 tsp) dry yeast

2. I can get the cake yeast whenever I want
There's a warehouse type place here that sells it. I like to use it in the bread machine, I think it gives a more tender crust. I sort of crumble it up and tray freeze it, doesn't take long to thaw. If you ever decide you want to use it, go to the bakery in a supermarket and ask nicely, they may sell you some. This also works for those bags they put garlic loaves in.
