Baked beans? Did I read a wish for baked beans?
I took a recipe I found on the Internet and gussied it up a tad:

1 (28oz) can Bush's Original baked beans
3/4 C chopped onions
1/8 C brown sugar
1/4 C Heinz Ketchup
1 1/4 tsp French's yellow mustard
1 1/4 tsp Worcestershire sauce
1 1/4 tsp red wine vinegar
2 tsp liquid hickory smoke
dash of salt and pepper to taste

3 slices thick-sliced hickory-smoked bacon

Place beans in a baking dish. Fry bacon crisply, then crumble into the beans. Add onion, brown sugar, mustard, Worcestershire sauce, vinegar, liquid smoke, salt and pepper. Mix this up well and bake at 375 degrees for 45 minutes or so. Serves 4 to 6.

1. Molasses
and chili sauce instead of the ketchup add bite. That's about how I do mine, except with small white beans or plain old pork 'n beans. Bush's beans are pretty good right out of the can.

2. Everything I've ever had right out of the can tasted like some pale
version of pork and beans. I experimented with three different batches before getting the proportions to my liking.

Your molasses and chili sauce sounds like a delightful variation.

3. That was me and this is a keeper.
My mother used to make them from scratch with a ham hock, but that's just not happening, so I am trying this one.

Thanks so much!

4. My recipe look similar to yours
except I start with Bush's Vegetarian Baked Beans and drain all the sauce off of them. I don't use these ingredients:

1 1/4 tsp Worcestershire sauce
1 1/4 tsp red wine vinegar
2 tsp liquid hickory smoke
3 slices thick-sliced hickory-smoked bacon

But I do use brown sugar and Frank's Red Hot. A lot of the time I find myself just doing this on the stove top and not actually baking them when I'm short on time.

Happy New Year, m' neighbor to the east. :hi:

5. Your gussied up version sounds pretty good.
I make baked beans from scratch (salt pork, molasses, onions, dry mustard and a few other seasonings.) I have a real bean pot and one batch in it is enough for about five meals. The beans keep well in the freezer too so there's no excuse for me to buy them in the can -- I just need to remember to make them.
