How I Got Past the Need for No-Knead
Not all that long ago I set out on a hunt for a basic, all-adaptable sweet dough, and came across this vid:

Seeing something like this gave me confidence that kneading *would* be rewarded and not leave sticky stuff all over sticky hands. Since then I've tried it making other breads and while the technique isn't always perfect for avoiding a mess, overall it does the trick.

technique with savory bread?
I don't make a lot of sweet dough products, but I might have to try some doughnuts!

And it seems I did have to scrape the table a little more than I did with the sweet dough. It was a couple of months ago, though, so the memory's a little foggy.

Made some cinnamon rolls with this last night, for the second time; it's what put me in mind to post it here.

Dee-lish.

Cinnamon rolls sound sooo good.
I think I may have to make a batch this week and see how it turns out!

5. I got past it with a Kitchen Aid
which I got because arthritis had made kneading extremely painful.

Once I got it through my thick skull that bread dough was supposed to start out sticky and nasty, I did do a variation of his technique. I still finish dough that way because it's just so satisfying.

6. I Started w/a Kitchen Aid
Just speaking for myself but there was something about kneading, as an inexperienced breadmaker, that played off all kinds of insecurities. "Am I doing it right? I'm not doing this right."

I don't know why the other one wouldn't.

I like this idea: "you can make small baguettes, slice them in half horizontally, and slip a thin bar of good chocolate inside for a very French after-school snack." (Maybe you could try that...but keep it away from the cat :))

10. Yup. Or shoot nutella inside! A hersheys special dark bar
sounds yummy though!

Our cats are freaks.
I swear one of the guys MUST have been a ballet dancer in a former life. He walks like a dancer, can get into positions I've never seen another cat master, and craves sweets and fats. :D
