This is a dish I made up screwing around in the kitchen. I got diagnosed with Type II diabetes last summer, and I have been forced to dramatically readjust my lifestyle. so far it's working well, and this is one of the reasons why.
The base is a grain. Often I use lentils, but it also is tasty with spelt, or wheat berries, or wild rice. The idea behind it is to replace white rice, which is way too full of simeple starches, with more complex carbs. Any kind of more complex carbs can be used really, just remember the magic formula for whole grains is 4: water to grain, instead of the 2:1 water to white rice ratio - 4 cups water:1 cup grain, 2 cups water: 1/2 cup grain, etc.
Put 1 cup grain to be used into a large skillet with some olive oil and toast it over medium heat. When it is browned, add 4 cups water and bring to a boil. For seasoning, 2 T cumin and 1 T turmeric should suffice, but if you want more you could probably double those. Then 1/2 T paprika, 1 t salt, 1 t crushed garlic, 1 t basil, 1/2 t cayenne, and 1/2 t sage. (Seasonings are approximate; I go by sight rather than measuring.) Keep a medium boil going, and add some diced meat (I often use chicken breast) and vegetables as desired (I usually dice an onion and green pepper at a minimum, and often I'll throw in some whole cauliflower and Brussels sprouts). Keep the boil going until the water is boiled off. This makes a good, hearty peasant dish that is reminiscent of Indian foods due to the cumin and turmeric.
