I'm experimenting with Brioche this weekend
Playing with 2 recipes: 1 from Rose Levy Bierenbaum's "The Bread Bible" and 1 from Shirley Corriher's new book, "Bakewise". The recipes are quite different but one thing in common: lots of butter! Brioche is interesting to work with because it's oh! so sticky! and I don't have much experience making it.

Right now the sponges sit for up to 2 hrs, then the dough gets mixed and refrigerated overnight. One batch _might_ get turned into cinnamon rolls or sticky buns, the other into a loaf.

It's been a while since I've done a bread experiment, so this is fun.

I'll let you know how they turn out.

1. I love brioche!
I've always used Julia's recipe and had great results, but I'm a Julia fan.

3. I learned it from one of julia's books, too...
tossing and slamming the dough around seemed to be the big trick to get it workable-- never failed doing it her way.

(Damn! She used a lot of eggs in that atuff!)
