Cooking cooking cooking..... I am so hungry, but almost ready :)

1. I made chili beans last week
but I need to work on the recipe, it was one of those "Did I take my Prilosec yet?"

2. So I get the plate made and take the first big bite and......
forgot the salt. Chit! Oh well, added salt and all was well, but you know how good that first bite is when you are really, really hungry, and then to be disappointed :( Oh well, there is always tomorrow.

7. Recipe?

Popeye's red beans an rice is very tasty. But being from the NE I have nothing to compare it to. Is this a good representation of it, or is there something much better?

Anyone have some good advice on what to try?

8. I use a quick vegetarian recipe.
Not at all like Popeye's. Look for a New Orleans style recipe if you want a meatier flavor. The one I used yesterday was two onions sautéed in olive oil until soft. Add a tablespoon of chili powder and cook for another minute on a slightly lower heat. Add two cans of drained red beans and a can of mexican recipe style diced tomatoes (it will have some mild chili peppers in there with the maters). Salt (I forgot that step yesterday) and pepper to taste. Dump some beans on some rice and add diced avocado, green onion, shredded cheese, sour cream or whatever floats your boat. Easy, cheap, yummy and nutritious; all the things I look for in a weeknight recipe :)
