I need an *easy* (cake mix) Pineapple Upside down cake.
And I mean easy. And, if it can be baked in one of those square pans, that is even better.

1. Melted butter. brown sugar..pineapple (drained)
pour prepared cake mix batter on top.. bake That's all there is to it..

My boys used to love that cake.. and the fruit cocktail cake and the jello cake :)

5. FRUIT COCKTAIL CAKE ..My kids loved to make this one themselves
FRUIT COCKTAIL CAKE




2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3/4 c. sugar
1 (16 oz.) can fruit cocktail
2 eggs
Sift in bowl the flour, salt, baking soda, cinnamon and sugar. Add vanilla, fruit cocktail and eggs. Pour in a 13 x 9 inch dish or pan. Bake at 350 degrees for 35 to 40 minutes.



optional....

we never topped the cake :) They usually scarfed it right out of the pan before it even cooked.. or they would scoop some out and add vanilla ice cream :)


TOPPING FOR CAKE:

1 stick butter
3/4 c. canned milk
3/4 c. sugar
Bring butter to boil. Add milk and sugar. Pour this over cake while hot and cake is warm.

when it's time to poke the holes in the cake, I used a small wooden spoon handle..


JELLO POKE CAKE
1 white or yellow cake mix
1 (3 oz.) pkg. Jello (your favorite flavor) we always used red
1 c. boiling water
1/2 c. cold water
Prepare cake mix. Bake at 350 degrees 30 to 35 minutes. Cool in pan 15 minutes. Poke holes in cake. Dissolve Jello in boiling water. Add cold water and spoon over cake. Chill 3 or 4 hours. Top with Cool Whip.

12. My grandma used to make that.
Sometimes she would use pudding to top the cake. I will have to make this for my son, I am sure that he would like it. Thanks for posting and reminding me about this recipe from my childhood.

4. Here is a recipe to make one in a skillet
This is directly from the recipe book that came with my Volrath set of stainless cookware. I make it in the large frying pan on top of the stove. It looks complicated but it's just the same as any scratch recipe. It turns out great even here at high altitude.

Pineapple Skillet Cake (from Volrath)

1/2 cup butter or margarine, divided
1 2/3 cups firmly packed brown sugar, divided
8 slices pineapple (I use canned)
8 maraschino cheries (optional)
2 cups sifted all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
2/3 cup milk
1 teaspoon vanilla

1. Melt 1/4 cup butter in the skillet over low heat. Cover butter with 2/3 cup of brown sugar. Arrange pineapple slices on brown sugar. Place one cherry in the center of each pineapple slice.

2. Sift together the flour, baking powder and salt in a bowl.

3. Beat eggs in a small bowl. Beat in remaining cup of brown sugar until the mixture is smooth and slightly stiff. Beat in milk and vanilla. Melt remaining 1/4 cup butter and beat into the eggs.

4. Pour egg mixture into bowl with dry ingredients. Beat until smooth, scraping down the bowl with rubber scraper occasionally.

5. Carefully spoon the batter over the pineapple slices.

6. Cover with the vac-control valve closed. (Any heavy, well fitting cover will do if it helps prevent steam from escaping too fast) Place over low heat and bake 40 minutes or until top springs back when lightly touched with fingers. Remove cover and let stand 2 minutes.

7. Cut around side of cake with a knife. Invert a large platter on top of skillet. Turn over and let stand 1 minute. Remove skillet. Scrape any syrup out of bottom of skillet and place on cake.

8. Serve warm or cold with whipped cream, if desired.

7. That's how my mom made it!
And in a cast iron skillet, of course. She also added pecans and maraschino cherries...yum. One of my favorite desserts.

8. This had to originate with the cast iron!
With any heavy cover to keep the cake moist as it bakes.

I wonder what kind of cherries can be used to substitute for the maraschino? Maybe just a dried sweet cherry that's reconstituted in warm water.

A combination of those last two might be wild! Maybe even pouring some of the brandy into the caked after its baked like a rum cake. then topping with some cherry frosting. Yikes!
