Used a great Buckwheat Pancake recipe this morning

Ever since the Denny's giveaway earlier in the week, I've had a hankering for pancakes.

What's nice about this recipe is that it is scalable. I made a 2 serving batch. So, I made tomorrow's breakfast already.

The batter was very creamy and RICH! But that's because I didn't have any buttermilk and instead used half&half cut with a little water. I did use butter too. Hey, it's the weekend. ;-)

I had it with a Morning Star Farms "sausage" pattie and an Omega 3 egg. Oh, and I drizzled on a little agave syrup. :9 :9

(edit: My heart is probably going :wtf: on Omega 3s AND butter! :rofl: )

If I do it again, I'll use canola oil in the recipe to make it more heart friendly.

1. These sound really good. And the comments in the reviews have some interesting tweaks.
Thanks for bringing this one!

And if something "needs" butter or cream, thats what it gets around here. Though I will use olive oil as much as I can. And Bill is a fried food lover - so we do have canola in the house. :D
I just try to be an "all things in moderation" kind of girl.

2. I LOVE buckwheat pancakes! And guess what? I have some
whole grain buckwheat (aka kasha) and a grain mill and this winter I think I'll grind up some buckwheat flour fresh and make some of those pancakes..........

They go REALLY well with a berry syrup, especially boysenberry/blackberry.

3. Buckwheat pancakes are awesome!
I remember my mom making them for us once when I was a kid and we were all like, "Yuck!" and wouldn't eat them. I never gave it another thought until a couple of years ago and actually had a craving for them. Isn't that weird after only one bite and decades ago at that? :rofl:
