Looking for a brownie recipe that uses creamed butter with sugar, eggs and cocoa powder

Looking for a brownie recipe that uses creamed butter with sugar, eggs and cocoa powder
Does anyone have a recipe like this?.?.?

I made these from a cookbook my mom had when I was still living at home. I have searched and searched all over the internet for this recipe and every recipe I have found uses melted butter.

The ones I used to make had a nice crunchy top and would sort of fall apart when eating them.

The recipe went kinda like this.

Beat/Cream butter until fluffy, add sugar, eggs, beat until blended well and nice and fluffy. Add dry ingredients (cocoa, flour, baking soda, not sure if baking powder was used) alternating with milk.


I hope someone here has a recipe I can use, because I love making brownies this way. I like doing it the other way with melting the chocolate but the brownies never come out the same as creaming the butter, sugar and eggs.

1. Have you just tried
making a recipe that calls for melted butter and not melting it, but creaming it instead? I wonder how that would turn out?

3. I read a recipe for the Ultimate Brownie once
The developer went on and on about why using melted butter was the ultimate trick for making the best brownies. I think it made them fudgier I don't remember :shrug: I do remember always wanting to try that recipe but alas it's gone. So if anyone comes across it and can hook me up with a link. I'd give you a big :hug:

4. I think what makes them fudgier
is if you melt the chocolate, cocoa, and the butter together.

I posted this recipe some time back but I still haven't tried them. It really looks to me like they are a double batch baked together.

9. I don't think I have tried because I get confused
with the cocoa and whether you use baking powder or baking soda.

I think I've seen TV chefs saying whenever you use cocoa you're supposed to use BS instead of BP, because it balances the alkaline or something to that effect.:shrug:

I get a little nervous experimenting with ingredients if I'm not 100% sure of the results. I'm not one who likes to throw out bad food ideas gone wrong.

12. I would just try
a basic brownie recipe and follow all instructions except cream the butter rather than melt it. If it doesn't come out right, you know you can still always eat it coz it's chocolate. No one throws away chocolate. :rofl:

It's not exactly as you described, but it doesn't melt the butter. I'll let you know if I find anything else.

CHEWY BROWNIES (from

)

1 c. flour
1/4 tsp. salt
1/4 tsp. baking powder
1 c. butter
2 c. sugar
3 lg. eggs
9 tbsp. cocoa
1 tsp. vanilla
1 c. nuts

Sift flour, salt and baking powder. Cream butter, sugar and eggs. Mix in cocoa, vanilla and flour. Add nuts. Bake in 9"x13" pan at 350 degrees until top is crispy.

7. Another one I found
This is a recipe posted by someone who said her grandmother used it:

3 tbsp. butter
1 egg
1/3 cup milk
1 tsp. baking powder
1/2 cup cocoa..MIXED to a paste with warm water
1 cup brown sugar
1/2 cup chopped walnuts ( optional)
1 cup flour
1/4 tsp salt

cream butter and sugar well...add egg and cocoa paste. add milk and dry ingredients and walnuts( if using). pour into pan and 350 for 25 minutes.

It calls for baking powder rather than baking soda though. You could substitute baking soda by using 1/4 tsp baking soda instead of the 1/2 tsp baking powder, and, of course, the nuts are optional.


Nutty brownies are made with cocoa and walnuts.
Cook Time: 25 minutes
Ingredients:

* 1/2 cup (1 stick) butter
* 1 cup sugar
* 1 teaspoon vanilla
* 2 eggs
* 1/2 cup cocoa, unsweetened
* 3/4 cup all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon baking powder
* 3/4 cup chopped walnuts

Preparation:
Cream butter and sugar until well blended. Add vanilla and eggs; beat until light and fluffy. Add cocoa, mixing in well. In a separate bowl, stir together flour, salt, and baking powder; add to the creamed mixture and stir until well blended. Stir in 1/2 cup chopped walnuts. Spread in a buttered and floured 8-inch square pan. Sprinkle with remaining chopped walnuts. Bake at 350° for about 25 minutes. Cool in pan then cut in squares.
Makes about 16 2-inch brownies.
