What's for dinner? ~ Monday Edition
Bill has the day off and will likely have:
Italian Sausage with Spaghetti & Herbed Garlic Cheese bread.


I am going probably going to have:
Should i actually type this?
I know how many people hate it...
I don't want to spoil your day!
I could type it in small font?
And warn you.
OK. That will ease my mind.

oh, they smell so good when I cook them for MrT...

too bad I get heartburn from peppers.. :nuke:

but since I love the stuffing, that'll be dinner for me.

Add a salad and life if good!

5. Yum! I can handle any cooked peppers EXCEPT the green ones.
I don't know if its psychological :rofl: or if there is enough change in them as they mature, but I don't have the problems with the orange, red or yellow peppers. Just the green ones.

I haven't cooked it for years though...I just forget about that option. When I'm cooking again on a regular basis I certainly will be adding that to my list. Yum!

I'm not sure I'm eating dinner tonight due to the remodeling craziness....which has just been kicked up a knotch. The contractor and SO got into it and now the contractor is threatening to walk. This long and sorry situation is so fricken un-necessary. I warned all the parties involved on all sides of this that things need to be clear for everyone but when you have a bunch of people set in their own opinions about how something should be done there's always gonna be trouble. I'm sick of this shit and I'm thinking about getting on a plane and running away to see my sister.

I have it once or twice a year too. Its economical and yummy.

As for the contractor, he needs to remember that he works FOR you guys. Unless what you want done is unsafe or against code he needs to simmer down. Bill has a winter job, but he's usually in construction so when we built our house, I knew the few subs that he hired. (he built the house himself) The electrician looked at me like I was crazy about a few things, but he did them anyway, and now he recommends them on new jobs. Nothing was earth shatteringly new, ideawise, just stuff that was outside his normal way of doing things. It's easy for that to happen.

7. bread and soup
A butternut squash, green bell pepper and garbanzo bean soup with focaccia bread.
I love the soup because its spices include turmeric, cinnamon and cayenne.
It's from the moosewood cookbook. It's yummmmmm.
My boys don't care much for soup, but they love this one.

I have some squash - what if I just bend it and add turmeric, cinnamon and cayenne - and maybe a dash of cream?

I never thought of having a first course!
Usually I just serve huge bowls of soup and giant pieces of bread and we grunt to each other at the dinner table.

10. I had Katzen's Enchanted Broccoli Forest Cookbook but must have loaned it out
I can't find it. She has some incredible recipes.

I also made a pan of chocolate chip bar cookies to make up for the fact that I never got around to making cookies yesterday.
I want the broccoli forest cookbook, but I already have so many cookbook!
I couldn't possibly buy another one, can I?

40. I have several cookbooks but inter-library loan is my new best friend.
I just got a call today that one of my books arrived. "No Need to Knead" - I cant wait to pick it up tomorrow! Gonna ask for Moosewood next. My local library is tiny, it could almost fit into my living room, so they have to request most things i'm interested in. Usually just takes a few days.

Your dinner looks really great!
I think I may request Mooosewood soon. :)

Gonna have to scrounge around and see what I have for fillings, and I'll use egg roll wrappers for the dough today.

I'm thinking feta and black olive with a little butter and shaved parm.

20. Just finished. Little too much spinach, but otherwise it was great.

I thought Bill was going to be late so I made the ravioli and figured I'd have bread and a salad with him later. He came in as soon as I finished eating them. LOL

Chopped the olives and then used a fork to mash them with the spinach and feta. I cooked them pot sticker style because I was too lazy to dig out a pot to boil water.

Pretty yummy. But too spinachy. Would be nice with a little shaved ham in there too, or sauteed mushroom.

I make a Greek pizza with shaved ham, spinach, black olive, mushroom and feta. LOVE those flavors together.

14. At least 4/7 meals a week here qualify as leftovers
I cook a big blob of something and change it up for a few meals.

36. Almost ALL meats get cooked for multiple meals 'round here.

We will roast a chicken and veggies and then make tamales, eggrolls, taquitos, enchiladas etc with the leftovers.

38. We do our best to keep
meat to only two meals a week. The rest of the week is vegetarian. You can get more than one meal out of them, for sure, and we sometimes do. Just depends on what it is.

My son has a basketball game at 5:30. Don't know when we'll get home and I didn't make anything ahead of time because I am recovering from cooking for 16 people yesterday. :P

I'm thinking some veggie omelettes may be in order after we get home tonight. Ya ever have breakfast for dinner?

19. 15 bean somethin' er other
Soaked a bag of Hambeen's 15 beans overnight
simmered them 2-3 hours

Added chopped med. onion
can of diced tomatos
3 cloves of smooshed garlic

Put whole dried thyme, red pepper, cumin, peppercorn, and fresh oregano in the mini chopper then added.

I'll probably add a few drops of liquid smoke when I get ready to eat. I'm also thinking about serving over rice... dunno yet.

The house smells yummy!

24. Braised sliced fennel on toasted Italian bread and ...
Penne pasta & chicken sausages baked with some mozzarella and ricotta cheeses.

I love liver & onions. Especially with mashed potatoes on the side so I can smother the taters with some onions. Enjoy your supper!

I'm experimenting with bread dough tonight--had a wet dough fermenting most of the weekend. I'm starting with pepperoni pizza and moving on to trying different baking methods with bread. The Mother Earth News bread seems to need more rising time before going into the oven--at least an hour. Also, I've been getting the best results by popping it into a preheated cast iron Dutch oven to bake. It tends to flatten as it rises, so tonight I'm lining bowls with parchment paper to rise the dough in. Then I plan to lift the dough with the parchment paper and plop it into the Dutch oven.

27. Thats exactly how I cook my bread now. I'm getting a thinner, yet still crunchy crust
and really great oven spring that way.

I preheat the pot to 500, place the bread and parchment sling in to it, cover and then reduce heat, and bake at 425. Uncover and then cook another 15 or so. Perfect every time.

However, I'm going to put the bread in tonight in a NON preheated pan, with a 325 degree oven, and then turn up to 425 to bake. I have shortbread in right now and don't want to wait for the pot to preheat. :rofl:

I'm not Punjabi either, AND I don't drive at all, but that should be close enough too...
We like spicy and we like greens.

42. Took out a small bag of my homemade frozen meatballs
Small can tomato sauce, a couple of big sliced mushrooms, green onions, garlic. oregano and basil. Serve over some of Friday's homemade pasta. Coupla carrot sticks and cherry tomatoes on the side.
