1. Chewey Coconut Macaroons - Sugar Free and Low Carb
Chewy Coconut Macaroons

1/3 cup almond flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs
1 teaspoon vanilla
3/4 cup Splenda
1 tablespoon butter - melted
2 2/3 cup unsweetened flaked coconut
1/4 teaspoon almond extract (optional)

Blend together almond flour, baking powder and salt. Set aside.
Beat together eggs, vanilla, and almond extract in bowl until foamy, then gradually beat in sugar.
Add butter.

Gradually add dry ingredients to egg mixture and mix well,
Fold in coconut.

Drop mixture by rounded teaspoonfuls, about 2 inches apart, on greased baking sheets.
Bake at 325 degrees for 15 minutes, or until golden brown around the edges.

Carb count for recipe is 36g for entire recipe after fiber deductions. Makes 1 1/2 to 2 1/2 dozen cookies.

Coconut Macaroons


14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, at room temperature
1/4 teaspoon kosher salt

Preheat the oven to 325 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

3. Molasses Crisps

Molasses Crisps**

3/4 cup (1 1/2 sticks) unsalted butter
1 cup sugar
1 large egg
1/4 cup molasses
1/4 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
1 3/4 cups all-purpose flour


With mixer, cream together the butter and the sugar until light and fluffy. Scrape down the sides of the bowl with a rubber spatula, then beat the egg. Cream until the mixture is light and lemon-colored. Add the molasses and mix until combined. Scrape down the side of the bowl.

In a separate bowl, stir together the salt, ginger, cinnamon, and baking soda. Add this to the butter mixture and mix until combined. A third at a time, add the flour to the butter mixture and mix just until combined. Wrap in plastic and chill at least 2 hours or overnight.

Preheat the oven to 350 degrees
Roll the dough into balls 1/2 to 2 inches in diameter (depending on what size you like them) and arrange them in well-spaced rows on the cookie sheet. Bake about 10-12 minutes, just until crisp. The cookies will be thin and flat. Let cool on the baking sheet 2 minutes, then transfer to wire racks. When cool, store in an airtight container.


**PREHEAT - 350
BAKE 10-12 minutes
Pre-chilling the dough is essential!

4. Lemon Whoopie Pie
:hi: We always have tons of lemons and this is my all-time favorite lemon cookie taken from www.joythebaker.com. Photo also stolen from Joy. I'm always making a batch. As she says, "These are not a snacking cookie. They’re a 'sit down and shut up and eat your freakin cookie' cookie."
I absolutely enjoy the heck out of making and eating them. You can make the cookie thick and cakey as well. The filling is lemon cream cheese. Too good.:9

5. Chipwich Birthday Cake...
...this is more an idea than a recipe:

Make two batches of chocolate chip cookies (I just use the recipe on the nestle toll house bag)

Press one batch into a greased spring pan - bake at 275 for 25 minutes
Then the other batch

Ask the birthday person to pick out the ice cream flavor.

When the cookies are completely cool wrap in plastic wrap until ready to serve. Put the "cake" together just before serving because freezing the cookies just doesn't taste as good and makes it very hard to cut.

Enjoy!

9. I think you can find it at bakery supplies. They make edible ink and papers, edible markers etc

8. Another copy and paste
from a previous thread:

1 1/2 sticks butter, softened
1/2 c. sugar
1 egg
2 cups all purpose flour

Cream butter well. Add sugar a little at a time, continuing to cream. Beat the egg to a lemony froth and beat into the butter/sugar mixture. Work the flour in to the mix. (I do that last step with my hands. It's really the best way to get it well incorporated.)

Divide dough in two and roll out on a well floured surface...very thin. Cut out with a 2" round cookie cutter (or whatever kinda cookie cutter you like.) Pick up with a spatula and place on a buttered cookie sheet and bake 8-10 minutes until edges are starting to brown. Remove to a wire rack to cool. Repeat until all the dough is gone.

A mod I made for chocolate wafers so I would have crumbs for a cheesecake crust was to simply replace 1/3 c. of the flour with 1/3 cup of cocoa. I also "floured" my board with cocoa.

The crisp little cocoa flavored butter cookies are delicious to munch on, too.

20. I'm longing for a shortbread pan.
I've made shortbread exactly twice, so I think I'm gonna have to wait a bit to justify getting one. :rofl: But I love all the cool things you can do with cookies.

Pizzelles are the number one favorite cookie around here but for some odd reason, probably because of family tradition, we only make them at Christmas.

Bill and I make them together using an electric iron that makes one at a time that looks like this one, without whatever red and green sprinkles they seem to have put in them in this pic(weird!):



I make mine so they are crisp, paper thin, and airy but I miss my Aunt Lucy's and my gran's. They were the best! I still have my grandmother's manual iron that looks like the one in this pic:





7 eggs, beaten
2/3 cup sugar
1 c. butter, melted
1.5 t. anise oil (not flavoring)
4 t. vanilla
3 c. flour
2 tsp. baking powder
1/2 t. salt



With Bill's love of chocolate, I also make some that have cocoa in them, too.

17. I have all the ingredients and no pizzelle iron!
I have the anise oil because I make a white licorice sorbet. I bet i'd love these. You should make some soon so I can live vicariously though you! :rofl:
