Bill will probably cook tonight, so I'm not sure what's on the menu yet. :)

28. Damn. I miss spinach and chard
DH is on coumadin, and can't handle the vitamin K. Broccoli and brussels sprouts are about 1/5 as high in K, so I do them occasionally.

SO will get his with Shredded swiss and little chunks of ham.



I'm also going to roast a chicken for chicken salad and for making stock.

5. Borscht
I just got back from the market with gorgeous beets and cabbage and potatoes and green onions, and I've got some lovely beef stock, and lots of sour cream and lemon juice, and the weather here is turning cold tonight, so it's definitely a soup night.



I baked some really wonderful Irish soda bread that will be perfect with the borscht, although Poland and Ireland might not agree.



I also picked up the fixings for some hot and sour soup. That soup thread yesterday got me thinking.........................

23. Not yet.............
Everything got sidetracked here tonight, and dinner ended up as a chicken curry (Trader Joe's Red Curry Sauce saved the day!), so I've not yet fixed the borscht. I'll be using my Mom's, which was, for me, the ideal.

If it's as good as I remember, I'll post it when I fix it. Thanks for the reminder.

And I only bake Irish soda bread because I hate baking but I love the bread, and the recipes I use for it are all no-knead and turn out really well.................

7. Loaded Baked Potatoes
I brush my potatoes with olive oil then roll in kosher salt before I pop them in the oven.

Toppings (take your pick): butter, sour cream, cheddar cheese, bacon, chives, broccoli

I bought a little 2 lb. tub of prepared baby back ribs in BBQ Sauce that are already cut into one rib sections. I'll heat those up too for on the side. I bet everyone will have one or two of those - they're pretty meaty, but the potatoes are the 'main event'.

Homemade chocolate chip cookies for dessert.

11. Chicken Stew, adapted from my Irish Stew recipe
Other than hunks of floured chicken thighs just barely touched by a saute pan before I started simmering them, it features (in order of appearance in the stew pot) butter and olive oil, onions, a diced carrot, a leftover handful of halved button mushrooms, minced garlic, some tomato paste, thyme, parsley and bay leaves, black pepper, a glass of red wine, about 2/3 bottle of porter beer, Worcestershire sauce, sugar, some organic beef broth, and boiled diced potatoes. Then I added the very lightly sauteed chicken and simmered for about 1/2 hour. I added a bit of flour to thicken it up near the end.

I sliced up some a sourdough french bread and made croutons by frying one side in garlic butter.

Urp...glad I made enough to freeze. It was great.

13. I call it my Anymeat Stew recipe
You can use it with any type of red meat or poultry. I've even made it with floured and more heavily fried tiny patties of ground turkey. A bit of bacon or ham adds a different tone (maybe eliminate the sugar and/or add some ground mustard powder), but it's still good.

I've never tried it with fish, though. I suppose that would make it more of a chowder...
