3 cups unbleached AP, 1 cup bread flour, 1 cup whole wheat, 1.5 cups semolina. Let it sit in the fridge for three days before using.

Baked some up tonight and Bill declared it the best, too. :9

1. 3 days seems to be the magic number in general.

Even the normal all AP or bread flour versions start getting really tasty at day three. We were just talking about that earlier today. We've never made it to day four, but I bet its even better. :) I WILL get past the 3 marker though, as soon as I order two plastic dough buckets. Maybe next week...

I actually managed to save a small ball of dough this time and worked it into the new bread base. I think that will help the early loaves a lot.
