1. No...
Having lived there in my youth and having visited many times--I think it's over rated. I think there are several great restaurants in each cuisines and many mediocre ones. As far as French technique goes the practice is in general better in Belgium which IMO has the best "French" food in the world.

Personally I'd rather go to the French Laundry (unfortunate choice of name in this conversation), but I've always been curious (about French restaurants). I think their reputation precedes them.

If I had to eat in Europe, I'd go to somewhere in Italy on a pizza tour. Screw the $400 dinners with the hoity-toity wine. Give me a good Margherita pizza and a cheap red, or even water, and I'll be happy.

4. I think when Americans gush over the food in France
What they are really responding to is the quality of ingredients. The quality of dairy products in France and the Benelux countries in general is far superior to ANYTHING we can get here. Cheeses are made with raw milk, Butter is rich and full of glorious fats, yougurts are smoothier, richer and creamier. Poultry is better, beef not so much. They use more duck fat and game birds. I'm not a big fan of rich sauces which is seen more in traditional French cooking. Trends like here now are moving to a "fresher" approach.

You haven't lived though until you've eaten moules et frites in Belgium. We get great mussels here in Seattle and I make some pretty fine shell fish...But nothing compares. I go back to the butter....Even the European Butters that you can get here just aren't the same.
