White pizza with onions and peppers

That thread that got into vidalia onions gave me an immediate taste for white pizza with onions, had to try to make some!

wanted to make thin crust baking sheet pizza.

3 cups AP flour + more if necessary
1.25 cups water
1.75 tsp salt
.5 tsp instant yeast use twice as much if regular dry yeast
1 Tb olive oil
1 Tb evaporated milk

mix, knead, proof 2 hours, rest in fridge overnight

this made enough for two 9 x 13.5" pans

saute 1 sweet onion and/or 1/2 green pepper -thin as you can slice - in olive oil. salt to taste

grease baking sheet, dust with cornmeal

roll out/stretch dough, place on baking sheet

grate mozz + parm onto pizza, add onion/peppers

bake on lowest rack at 450 for 20 minutes

this one has onions and peppers, the all onion version was equally tasty!

That looks soooooo good!

There is a classic foccacia that uses thinly sliced onions, olive oil, and salt. That's it.

With the onions thinly sliced and sauteed, I'm imagining a more or less delicate pizza. And that's the classic way to do it.

Now consider ..... thick slices of Vidalias, drizzled with olive oil and sprinkled with salt, and grilled. A different flavor than sauteeing. Then cut the slices such that you get 'slabs" of single onion layer thickness about an inch long. A more rustic flavor and a chunkier texture.

Vidalias and pizza .... two of my favorites!

Fig, Prosciutto and Goat Cheese..... I normally don't eat Pizza and if I do it's usually not the frou-frou kind but this one was Amazing. The crust...the crust...Oy.....
