Anyone have recipes for mayonnaise?

Not how to make it, but recipes that spice up mayo.

I used to do one years ago, looked all over for it, and cannot find it.

I just remember it was yummy.

Anyone spice up their existing salve? :D

1. When I make my own mayonnaise,

I always throw in a few garlic cloves - I use the Cuisinart - and some cayenne. Gives it just the right tang.

But, I also stir in some powdered chipolte, or some powdered wasabi, or powdered horseradish, or dry mustard (the hot Oriental kind, not the Colman's that's used in the mayo recipe), or some powdered onion, although that's not a big favorite.

All those flavors come from Penzey's, but perhaps the favorite around here recently is the mayo with smoked paprika stirred it. A GREAT dip for cold chicken and/or shrimp, or raw vegetables.

5. So, basically test tastes with dry spice/herbs?

7. Pick what you like,

and put it into a bit of mayonnaise. See how it tastes. Usually, as I'm sure you know, you have to let things sit for a while, maybe overnight, to let the flavors marry. I routinely have four or five small containers in the refrigerator with different things in mayonnaise.

I also put soy sauce - sweet Indonesian soy sauce (kecap manis)- into mayonnaise with some garlic, and dip cold shrimp. It's yummy................

2. I don't really "make" mayonnaise

Just because I don't eat it that much

But when I buy it, I tend to get it one of three ways...

- Regular (duh)

- Chipotle or Cajun

- Wasabi


The wasabil one adds an interesting dimension to your sandwich (but you have to like wasabi, obviously)

6. One of the reasons I ask is..

I don't eat it much either but the date on mayo is like... long.

In my brain it made better sense to sanitarily remove portions and use the separate portions until gone :D

3. I just made Remoulade sauce tonight -- that's sort of like spicy mayonnaise

I didn't measure anything, but it's about 3 parts real mayo, 1 part dijon, 1 part ketchup and a few drops of tabasco sauce.

It's probably a lot more elaborate than you want, but I always have a jar of this on hand, either for sandwiches or dips or - thinned with a bit of water - as a salad dressing or over vegetables.

It's also yummy........................

9. Trader Joe's sells a wasabi mayo that is really good.

I bet you could make that easily at home with regular mayo and wasabi paste.

Has anyone else tried vegenaise? It is really close to real mayo, but just not quite there for me.

11. A nice tasty mayonnaise

is Duke's, which you can get at Harris Teeter.

I make my own, but this stuff - a Southern staple for many years - is really good,



plus, you can make a mean chocolate cake with it .................
