Who's got a good Pina Colada recipe?

Who's got a good Pina Colada recipe?
It's a beautiful Friday afternoon and I am in the mood for a Pina Colada.

I have coconut milk, rum, ice and just sent DH out for pineapple juice. I also have a ripe mango. Would that be good mixed in there, too? Anything else I need?

1. Uh, oh. True to form, DH just arrived with Pineapple/Orange juice.
Will that work? I don't think he has ever come back from the store with what I have asked him to get.

2. sure, it will work
but will make it a bit more 'acidic'

and you sure can throw some mango in, or just use it as a garnish. mango slices would be tasty after being marinated in rum and coconut milk

as for the recipe, fill the glass with ice and dump that ice into your blender, add rum and then a tad more than half of coconut milk with a tad less than half pineapple/orange juice (50/50 if it were real pineapple) and blend.

garnish with whipped cream and mango slice

5. Made them, but couldn't do the blender thing. Just mixed with ice.

Ya need coconut 'cream'. Very sweet and thick.... kinda like the texture of caramel and as sweet. It's delicious.

To use coconut 'milk' would be like using milk in a recipe calling for honey or caramel.

I got a recipe for ya! I grew up partly in Hawaii and my grandfather made 'Kailuas'. I think he invented them.

Fresh pineapple (cut in chunks)
A little grenadine
Plenty of rum
Ice

Throw it all in a blender and whir till pink and slushy & pour into beautiful martini glasses. Drink many. Send someone out to the store for another pineapple. Repeat.

4. 'Chi Chi' is the Hawaiian version of a Pina Colada.
Pineapple juice
a big spoon of coconut CREAM
vodka

The coconut cream has a wonderful flavor of coconut. Coconut milk is for curries, stews and haupia, not drinks.

6. You are right. It was the creamy, sweet stuff that I had - in a can, right?
The Kailua's sound wonderful, but I don't have the use of a blender.

7. Yep, the thick stuff in a can! Mmmmmmm!!!
I reckon one could do Kailuas on a food processor. I don't have a blender anymore, either.

8. My issue has to do with limited energy.
We live primarily off solar panels, so I don't have any electric appliance (except that DH has his beloved expresso machine, which eats energy like crazy).

I do have several *smashing* implements and could probably get it done by hand!

9. Then I'd say use some ready-made juice, smash a bit 'a pines,
make it pink, put plenty of rum in it and freeze it some. Enough rum will keep it from freezing solid, and it's all about the rum anyway!

That's right... yer living on the 'ship'?! I fergot.

10. That's a great idea to put them in the freezer for awhile.
I could put them in a ziplock bag and then just slush them.

12. I got mine from trader joe's.
I had intended to make a thai coconut soup, which I adore, but never got around to it.

The Colada's were great and I am going to have another (or two) tonight.

14. Yep, that's the usual... but couple years ago I saw a new brand in a plastic jar.
Prominently displayed at Safeway market. Because it was new, it was on special. I know I bought two jars when my daughter was visiting, but don't know anything for sure after that. I think it was really good, but am not entirely sure.

Several days later we made mojitos.

15. When I was a kid we used to get non-alcohol pina colada drink in Manhattan
There were big stands on the street corners where they'd blend up fresh, chilled pineapples and coconut milk and serve them in pointy paper cups placed in a plastic holder.

What a great memory jog!
