What should I put in risotto?

I'm getting a taste for risotto, but I want to add more than the usual -- dried porcinis and then baby peas at the end. I'm thinking I want to add bits of cookes meat of some kind, but I can't figure out what.

Any ideas?

1. We like clam risotto

Make it pretty much like a white clam sauce. Use clam juice as part of the liquid. White wine, too. If you use canned clams, add the juice whenever, but hold the meat to the end and stir it into the finished risotto .... or no earlier than a minute or two before it is done.

You could do this with any seafood. Again, clam juice adds the flavor. If you need extra liquid, you could also use some chicken broth, but a fish broth is better.

A different twist on the same thing is a red risotto. Here you add canned tomatoes and their liquid. Clamato juice would would also work.

2. Pork,

some threads of pork or veal might be nice. My friends in Lucca almost always put some veal in their risotto.

I sometimes throw in sausage, if I have leftovers.

Or - I know you said "meat" - but what about shrimp? Crab?

Asparagus? I love that.

My nonna made it with fava beans, but that was never big with me.

I once threw in some lemon peel, and that was nice.

My next plan is risotto with chunks of meatball. I have a feeling that might work. Or tiny slices of ham .............

So does sausage. I'm assuming Italian sausage, already broken up and cooked.

in the casings. But, yeah, loos is good, too.

9. I love, love, love Risotto.

The last one I made had crumbled bacon and asparagus, one of my favorite combos. I also like chopped up ham with peas and mushrooms.

11. GMTA I've been thinking about bacon all day

I have the Aborio , the Wine, the Cheese, the Aspargus and even some bacon hidden in the back of the freezer.....If not tonight...Then this week end. I'll have to plan a cheat meal.
