Homemade marshmallows!

I made my first batch yesterday - They are DELICIOUS! Beyond my wildest expectations. So silky-smooth, flavorful, soft and melt gloriously in a cup of hot chocolate. Completely different from what you buy in a plastic bag at the grocery. Utterly delightful.

1. What recipe did you use?
I have watched Martha Stewart make them, but that is the extent of my knowledge. They do look good! :9

I've had homemade marshmallows before. Whole Foods sells them (chocolate ones too!) and you're right. They are just like another species.

Yes, I really DID browse the entire thread... it took me 3 whole days! There are lots of pictures of results different folks had. There are many pre- and semi-pro bakers on that forum so there were some really nice pictures and some intricate discussions. But I'd learned enough after a few pages to make the marshmallows. I did't have potato starch so I just used powdered sugar and cornstarch.

Fair warning - a good stand mixer is is definitely recommended for these and a candy thermometer is needed too. Most hand mixers don't have the power to whip the fluff up enough, plus the amount of time it would take would wear your arm off.

I highly recommed them. They are unbelievably easyand good. Have fun!

Unfortunately I don't own a stand mixer or a candy thermometer - just haven't needed one. So I appreciate the warning! But I'm saving the recipe anyway as I may have them some day.

Anyone know of a viable substitute for the corn syrup?


Nightscotsman's Marshmallows Vanilla Mini Batch

gelatin envelope 1
water 3 Tbs
vanilla extract 3/4 tsp
.............
sugar 3/4 c
water 3 Tbs
corn syrup 1/4c + 1Tbs
(those sliding plunger style measuring cups work great for the corn syrup)
salt 1/8 tsp

I find that this fits into a sandwich sized plastic storage container (holds 3.4 cups) quite well, though it does make for tall marshmallows.

8. Potato Starch
Oh, I didn't re-read the recipe when I posted it. It was part of a forum discussion where the consensus was to use a mix of potato starch and powdered sugar to coat the marsmallows. Some used a mix of corn starch & powdered sugar, some use a mix of potato starch & powdered sugar, some used all potato starch. just some added information.

9. Yep. My bro-in-law wanted the sweet potatoes w/marshmallows
for Thanksgiving. I volunteered to make that dish, and used homemade marshmallows.

They're quite different from the nasty things you buy pre-made.

10. I"m making these for the holidays
I have all the ingredients but have kept putting it off. I've been such a weenie since this will be the first time I'm trying to make them. Yours looks great!

13. I used the whip in my stand mixer
It's a Cuisinart 7 qt, so it's a really deep bowl. The marshmallow fluff heavily coated about 1/3 of the whip, and I was able to knock off most of it back into bowl before I turned it all out into the pan.
